The Martha Stewart website has great ideas. Many.
Her "Everyday Food" recipes are great and easy.
Hmm, really depends on what you're looking for. We bought a foreclosure home and don't have an oven-So my main meals right now are chicken chili, stuffed cabbage, pot roast, chicken and dumplings, and barbecue chicken in the slow cooker.
I like to use allrecipies to search for recipies using ingredients I have on hand.
I miss my oven.
This time of the year I also like to make homemade soups and casseroles (tatertot casserole and breakfast casserole are family favs)
fajitas
buy pre cooked grilled chicken by Perdue
tortillas, sour cream, shredded cheese(your choice), onion, peppers(green red..your choice), any other toppings you may like. I keep it simple.
in skillet with olive oil throw in chopped onion and peppers-let simmer 'til onion is clear and peppers are browned(add a little broth if it starts to dry out)
add chicken
season(I use Goya Adobo-the red cap)
toss
add chicken broth (enough to pick up what's on the bottom of the pot-do not make soupy)
toss
let simmer for about 20 minutes.
serve chicken in bowl
set out cheese, sour cream any other toppings you'd like and tortillas
everyone serves themselves
heat tortillas in microwave or on gas lit stove. Straight on the flame or in a frying pan...your choice.
White Chicken Chili is a hit, as well as Chicken enchiladas (super easy) I just put (already cooked) chicken & cheese inside and put the enchilada sauce & more cheese on top then bake it in the oven for 20-30 minutes ........ Turkey burgers on the grill ... I mix ground turkey with lime juice & garlic, YUM
One of our favorites, especially this time of year (winter) is swiss steak. It's is SO simple.
Package of cubed steak, salt and pepper it, lightly dredge/toss it with flour, and brown in a little oil on the stove. Then, add a couple cans of seasoned stewed tomatoes (peppers, oregano and garlic--I like Del Monte's) and cover with a lid. Simmer for an hour or more...
Serve over a bed of rice, with whatever green veggie you like on the side. You could make a tossed salad, or I usually serve steamed green beans or english peas along side.
The stewed tomatoes and rice, just those two alone, remind me of summers at my granny's house. :)
I love to cook... I have found a lot of wonderful recipes on a website that is a recipe club. The recipes are posted by women (and a few men) that love to cook. They also have pictures. Go to www.justapinch.com You can browse all you want, but if you sign up (for free) you can start your own recipe box. I'm sure you will find some yummy ones there.
• Fried rice. We like it with shrimp, but you could do chicken, pork, meatless, etc. Google around for recipes to find one that suits you.
• Pasta with peas, ham and cream (http://www.epicurious.com/recipes/food/views/Orecchiette-....
• BBQ chicken pizzas (shredded cooked chicken, BBQ sauce, cheddar/jack cheese, sauteed red onion, chopped cilantro on individual Boboli crusts)
• Grilled Italian sausages with Parmesan polenta and broccoli rabe or broccolini. You can also sub in herbed lamb chops for the sausage and have an equally fine meal.
• Pasta carbonara (my favorite recipe is here: http://www.ruthreichl.com/spaghetti-carbonara.html).
• Anything with eggs - frittatas, omelets, scrambles, Benedicts, fried egg sandwiches, huevos rancheros, etc.
• Shredded cooked chicken tossed with cooked couscous, toasted pecans or almonds, dried cranberries, a little grated orange peel and salt/pepper.
Red or green Thai curry with rice. Easy peasy - just get a curry base and some chicken or beef and coconut milk and whatever vegies you have.
