Here are two for ya! The first is from my Mom and the second is similar from Christmas Recipes from the Lionhouse.
HAM RICE BAKE
Ingredients:
3 cups cubed cooked ham
2/3 cup long-grain rice, cooked
1 TBLS snipped parsley (I use closer to ¾ cup)
1/3 cup chopped onion (I use more and sometimes red onion to add color)
3 TBLS butter or margarine
3 TBLS flour
½ tsp salt
1/8 tsp pepper (I usually add more)
2 cups milk (I heat to almost boiling in microwave to speed up the process)
3 beaten eggs
1 TBLS prepared mustard
Topping:
1 TBLS butter or margarine (I always use butter)
¾ cup soft bread crumbs (I just take a couple slices of bread and crumble them)
Combine ham, hot rice, and parsley.
Cook onion in the 3 TBLS of butter; blend in flour, salt and pepper.
Add milk all at once.
Cook and stir till thickened and bubbly.
Stir HALF of the hot mixture into eggs; return to saucepan and cook 1 more minute
Blend in mustard
Stir sauce into ham mixture.
Pour into a 10X6X1 ½ inch baking dish.
Melt 1 TBLS of butter; stir in the crumbs.
Sprinkle atop the casserole.
Bake in 350 degree oven for 25 to 30 minutes. Let stand 5 minutes.
Serves 6
CHRISTMAS MORNING CASSEROLE
8 slices bread
1/4 cup [butter], melted
1 cup cubed ham
2 cups grated sharp Cheddar cheese
4 eggs, beaten
1 1/2 cups milk
1/4 salt
3/4 dry mustard
Preheat oven to 300 degrees F. Remove crusts from bread. Brush on melted [butter]. Cut up into cubes and spread into 9x13-inch baking dish. Sprinkle with cubed ham and grated cheese. Mix eggs, milk, salt, and mustard and pour over casserole. Bake for 1 1/2 hours. Makes 8 servings.
