Egg Casserole-dumb Question

I am looking for some QUICK and EASY breakfast ideas for my kids. My oldest will be going off to Kindergarten this year and I will still have two boys at home. It will be fairly likely that we will not all be eating breakfast together due to my oldest needing to get out the door earlier than my others. So, here's my question. My daughter loves to eat eggs. I've heard of people making an egg casserole and cooking it in a muffin tin (so they are in individual portions). Can you freeze the portions? What is the best way to go about reheating them if you can freeze them? I was hoping that I could cook up a casserole and freeze it and only take out individual portions as they are needed. Is that doable? I've never tried to freeze eggs before. I'm just looking at ways to make my like easier in the mornings! I'm open to any other ideas, suggestions, or breakfast recipes too!

This was an idea that was given to me by a bachelor friend of mine...Take a sandwich ziplock bag and place inside of another one. Place the doubled up bag inside of a coffee mug. Crack one or two eggs, depending on how much you want, inside of the inner bag. Place about a teaspoon or so of water in with the eggs. Scramble with a fork and salt and pepper if you choose. Zip the inner bag to just about closed. You'll want to leave a little space for steam to escape. Now zip the outer bag similarly, leaving just a little space open. Place the whole thing into the microwave and set the time for 1 minute per egg inside the bags. Let the microwave work its magic, and PRESTO! You have one minute scrambled eggs. When you remove the eggs from the bag it will be VERY hot so be careful. I do this sometimes for my boys in the mornings when we're running short on time and I want them to have a half way decent breakfast. It's something that I can pop into the microwave while they're getting dressed and I'm free to do other things. The eggs come out hot enough, that if you want, you can sprinkle a little shredded cheese on them and it will melt by the time they get to eat it. I've also tried putting a little bit of torn up shaved ham, or the recipe type bacon bits in them for something that's kind of like an omelet.

Oh, btw, if you try this, they do come out looking like a cylinder, so after you put them on a plate, you'll have to break them up with a fork. Enjoy!

I scramble eggs with cheese in a corelle bowl...a little butter or oil on the bowl. Might be able to skip the butter. Corelle works well because it's really like glass...thin and doesn't heat like ceramic dishes. I microwave for 1/2-1 min in a microwave and eat out of the bowl. I usually cook the egg 1/2 then stir and cook the other 1/2 min. You might be able to skip the stirring in between. I've seen this type of thing suggested with ziplocks but don't like the idea of the trash or environmental issues created and you will dirty a dish anyway when you eat.

I have heard that eggs already cooked then frozen, thawed and warmed up get rubbery or watery. The recipe I found below is something that you can make ahead, freeze then cook... my guess is you can do this is little portions.

i have never frozen eggs...

But with 5 kids... 3 in school and two at home.. 2 and almost 1... i understand wanting morning to be easier.

I always keep a bowl of fruit for them to grab something, we will make a very large batch of pancakes ( i add blueberries, apples, banana's to them so they have different choices and getting the fruit) and once cool we freeze them in individual baggies so they can grab one and stick it in the microwave for a min and they like them with out syrup. muffins are another one we make and freeze. The go-gurts are another one we have on hand for when the mornings are crazy they can grab that and a piece of fruit and eat them on the way to school

off the track here...
but one tip that we do is every night the kids put their back packs and coats and hang them on thier chair and thier shoes under it so we know where it is and its one less thing to look for in the am.

I'm not too sure about the eggs. I do make pancakes, waffles and french toast on the weekend and make extra to freeze. My kids are able to pop it in the microwave before school. They have a warm breakfast that is a ton cheaper than the boxed ones at the grocery store. I made french toast with some fancy bread as my children like to call it from Great Harvest Bread Company and they love the different flavors.

Cooked eggs don't freeze well. However, raw eggs freeze just fine.

Line your muffin pan with papers and fill them with the egg dish. Stick the muffin pan in the freezer, that way the uncooked cassarole will freeze in individual portions. Once they're frozen, just pull them out of the pan and put them in a freezer bag. This way if you're short on time you can pull one out of the freezer, put it in a ramekin or small dish and microwave it.

For fast eggs we take a small tupperware bowl (3" wide by 3 or 4" high is what we use) and spray it with Pam, put in one egg, a splash of milk, sprinkle of salt and stir. The salt is so it does not explode. Once mixed put in microwave for one minute. Take it out flip it onto a plate and it is done. You may also add any fixings you want. My kids like to add a slice of cheese on top when it comes out of the microwave and it then melts.

I make homemede 'Mcmuffins' ahead of time and they freeze just fine. The eggs are hard cooked and I just fold them in half before putting them on the sandwhich, add a slice of cheese and a round piece of ham onto an english muffin or onto a croissant that I cooked in the oven (I try to round them into muffin size by pulling the ends close together, look for the big sized ones) and then put it all into it's own small ziploc bag. The kids can pull it out anytime and thaw it in the microwave, I believe it takes 3 minutes with the bag partially open and they absolutely love them because then they can grab breakfast at any time and by cooking in the bag, they come out nice and moist!

I make eggs in a coffee mug in the microwave and it's GREAT!. Spray a mug with non-stick spray. Wisk-up two eggs and a splash of milk in the cup with whatever your kids like (cheese, ham, tomatoes, etc) and microwave for 45 seconds. Take the mug out and mix it all up again and then microwave for another 45 seconds. So easy and yummy! You can even do it with "egg beaters" if you're trying to save on calories.

My son loves eggs too and what we do is just make extra scrambled eggs on the weekend and keep it in the refrigerator to reheat during the week. We have kept cooked eggs in the refrigerator up to a week and it has been fine.

Also keep leftover pancakes from the weekend too.

Generally, eggs do NOT freeze well (unless you consider rubber a pleasing food texture). But I have noticed that Schwan's found some way to do it.

On the other hand, eggs cook so fast, that there is little advantage in having them already cooked up. You could do the mixing ahead..maybe mix a few eggs with some milk, cheese, meat, whatever and keep it in the fridge. Then get up in the morning, pour a little out on a skillet or in a custard cup for the oven, fry or bake, and be done. I would think a mix like this would keep for nearly a week.

Hi I recently had this egg-sausage casserole at my step-mom and dads, it was so good I had to get the recipe. It was made in a 9x13 cake pan but I think you could divide the recipe into muffin cups to make individual portions and then possibly reheat it in the microwave if you thaw it out the day before in the fridge perhaps. The recipe has cream of mushroom soup in it but if I hadn't known I would not have guessed, so kids probably won't turn up their noses at this if you don't tell them.

Butter 9x13 cake pan (or muffin cups). Put one box of seasoned croutons in pan, mix with 4 eggs, 2 1/2 cups milk, 1 can of cr. of mushroom soup. Pour over croutons, Sprinkle 1 cup or more of grated cheddar cheese on top. Brown then cool sausage (sorry don't have amount for this, just guess), sprinkle on top. Refridgerate a day. Set out until to room temp. Bake 1/2 hour at 350 degrees, then another 1/2 hour at 325 degrees.

Eggs cannot be frozen. I don't know if u planned on using potatoes, but they taste gross after frozen then reheated.

Not sure if you are interested...but my aunt gave me a FANTASTIC breakfast burrito recipe that freezes amazingly well for up to a year. Basically you make sausage, hash browns, and scrambled eggs separately. Then you mix them with cheese and salsa (and chilis if you like) and put them in a tortilla and freeze. It makes a great hot breakfast that is super filling and nutritious. The best part is you can make a batch of about 35, freeze them, and microwave them for 2+ minutes for a quick hearty breakfast anytime. If you would like, I would be happy to dig out the recipe. I have made larger batches of scrambled eggs and just kept it in the frig, popped single servings into the microwave--sprinkle shredded cheeses and serve. I have not tried freezing; and I'm not sure how many days they will keep in the frig. But even preparing the night before and reheating???? I'll be watching for other suggestions b/c we are looking for similar ideas...

Okay, a little stray from what you asked, (I have no idea if eggs freeze well or not.) but I do have another quick and easy breakfast option. My kids often have yogurt in a bowl topped with whatever cereal they like (I only buy the healthier stuff.) Then, they have a piece of fruit on the side (half a banana a quarter or more of an apple, whatever.) My K and 1st grader have even in the last couple months begun to prepare this for themselves and their little brother, making it even quicker and easier (most of the time) :) on me.
