I've been freezing cheese for decades. My mom froze cheese when I was a kid. Your laughing cow should be happy and probably laughing when you let it warm up.

To try it leave one in the freezer over night or maybe even two nights. Then take it out and let it thaw. Taste it. If its ok, then you know there is no harm to letting it freeze and thaw.

Good luck to you and yours.

You can freeze cheese. The issue is that sometimes freezing cheese can cause it to be grainy and often, it will crumble. We freeze shredded cheeses often, but I usually don't freeze blocks of cheese.

My mother in law has frozen the Laughing Cow wedges, but she freezes everything. She says they change ever so slightly in texture, but not taste. I say do a test run with a wedge or two (without telling your daughter) and see if she mentions them tasting different.

I have frozen other kinds of cheese and it has been fine. Also - my kids love the Laughing Cow cheese, and I recently realized that Costco has it for decent prices (much cheaper than the grocery store!). You may want to see if the price at Costco is better than your price with coupon at the grocery store (it might be).

I think it lasts in the fridge for a very long time because of the way it is wrapped.

I have had laughing cow cheese in my fridge well over a year and it is still fine. I suppose it is the packaging.
