Gluten Free-Diabetic Friendly Dessert

We are having my daughter's 4th birthday party on Saturday and I just found out that one of the boys invited needs a gluten free/diabetic treat. I'm sure his mom will bring something, but I thought, if possible, it would be nice if I try to accommodate him. He just found out that he is diabetic and needs gluten free and at 4 that can be really hard to deal with and I don't want him feeling left out. Since I'm serving cake and ice cream, I was hoping to at least find a cupcake so he can eat what the others are eating. I'd rather not make something as we just need one serving, but will if I have to. Does anyone know of a bakery or even a grocery store that will have something pre-made that I can just buy one of?

That is wonderful that you are making such an effort to include him! As a parent of a child with diabetes, that makes me very happy. For diabtetes, usually the parent needs to know the carbohydrates in the food so they can give the child the correct amount of insulin. As far as finding gluten free, most grocery stores have a gluten free section stocked with treats. I know Whole Foods does. I'd ask the parent because they probably already have a list of places they go. Good luck with the party!

If he has Type 1 Diabetes (which I am assuming he is) then all foods are diabetes friendly (mabey "friendly" is the wrong term, but a T1 Diabetic can eat any foods that a non diabetic can- they just adjust insulin dose accordingly). A Type 1 Diabetic is not restricted in food choices, unless they have a secondary condition, such as the gluten issue you mentioned.

Have you called any bakeries to see if they have gluten free offerings? You may be able to purchase a couple of cupcakes. Otherwise, many grocery stores carry gluten free cake mixes.

You are so thoughtful to want to accomodate him! If you can't find anything, he will most likely be very happy with the ice cream! :)

As a mom of a son who has celiac disease & needs to eat gluten free (GF), I think it's wonderful that you are trying to accommodate him! Most likely his parents will bring food he can eat. If you have a Wegmans grocery store nearby, they have a large GF section. They typically have desserts in the freezer area of the GF section. Whole Foods stores have a decent GF selection too. Most grocery stores have some items but usually not a large selection.

If you have an ice cream maker, throw some coconut milk and crushed pineapple into it. This makes a decent no sugar added dessert.

I am sorry I have no ideas but want to tell you I think it's very sweet of you to want to do something for him!! My son's can't have regular ice cream and when they are young they don't understand not getting what everyone else gets.

Has the cake already been ordered? Can you just order one from a gluten-free bakery and ask for a recipe that is diabetic-friendly? Maybe an ice cream that is diabetic-friendly can be infused with cooked fruit, like apples and peaches with cinnamon. Or make a float with ice cream and juiced apple?

We always serve a bowl of fresh cut berries at our bday's. So what about offering a pretty fruit tray? Or ask the mom directly what she does and recommends? Maybe she can recommend which bakery to ask, which aisle in the grocery store to find such a specialty item, etc.

Rather than replace the cake portion, it's easy to find diabetic friendly frozen treats.

check with local bakeries and see if they can make a gluten free cupcake. Ask if they also have a way to reduce the sugar used. That will give him something special to enjoy. See if you can get a label on the amount of ingredients used so his mom can adjust his insulin or other food he eats that day. That is very nice that you are trying to accomodate him.

As the mother of a Celiac child, also diagnosed at 4, I will tell you that grocery stores like Wegmans and Whole Foods will have GF treats in their bakery section (at Wegmans, they will actually be frozen). What I will also tell you is that they are terrible (dry and flavorless in our experience), and my daughter won't eat them. A box of 4 cupcakes will likely set you back $7 or so, and there is a good chance they will just go to waste. Better bet is to find a local bakery that bakes GF (there is one in Manassas called Persnickety Cakes) and buy a single fresh GF cupcake for him. I always provide a GF option for my kid at parties, since I know how expensive the treats are and I hate to see a hostess buy something I know my daughter will not like. Providing fruit, chips, and other snacks that a Celiac can eat is most helpful, that way the mom will only have to pack the cake treat and not an entire array of items so the kid does not feel left out. Good for you for trying to accommodate this child!
