okay - for some reason - I want chicken and onions for dinner....no, I'm NOT pregnant....but I'm NOT sure HOW I want to prepare them...you ladies (and gents) have given me some GREAT recipes in the past...how about again?!?!? Please?

Didn't do fajitas as we had already had Mexican this week and Italian....
low heat marinated in olive oil and sliced onions....added some water and garlic...served with rice and corn (not what hubby wanted but I wanted corn!!)

Why not make fajitas? Grill the chicken and onions and peppers and whatever else in a pan, stick it in a tortilla.... NOW I'M HUNGRY!!
In fact, I'm not cooking tonight... going to Mexico restaurant.

I make something my son has dubbed "Simple Chicken".
I cube chicken - can be white or dark meat - salt and pepper it, toss it in the electric wok with some olive oil and a touch of sesame oil. Then I throw in sliced onions (we prefer purple or vidalia) and minced garlic. Toss everything around in the wok until the chicken is cooked through, de-glaze with chicken stock and serve over rice.
The great thing about this is I can cook it in large batches, then through the week we can add different sauces and veggies and just re-invent it into different dishes.

Well, I'd prepare chicken, onions, AND peppers, i'd saute them up with some serrano peppers, and make a chicken fajita!! You could slice up the chicken before you cook it, and use just a tad of oil, and some water and add some garlic when you're cooking it. If I'm really going all out of my fajitas, I'll marinade the meat in this: soy sauce, honey, garlic, lemon juice don't have the amounts, I just tweak it, but it makes the fajitas wonderful!! Okay, I immediately went to fajitas too! You could also carmelize the onions and maybe grill the chicken, brush it with some balsamic and apricot jam if you have it?? I guess I don't have an actual recipe to pass on but you could always mix the onions into other veggies too! Whatever you do, hope it's delish!
not soup weather, but one of my favorite things to do with onions is onion soup. Can defainately be made with chicken.

or brown chicken breasts in skillet, add a can of golden mushroom chicken soup and sliced onions, cook covered until soft bubbly wonderfulness and serve over buttered noodles or rice.

You can grill the onions and serve them on the side with bell peppers, dice them real small and stuff the chicken with them and something else after cooking them briefly, dice them super tiny and add bread crumbs to add a breaded layer.

yuck, not a big onion fan. i need to figure out what to do with my boneless pork chops and stuffing mix! maybe i'll ask on here...hope your dinner turns out yummy!!!
How 'bout braising, if you have the time?
Brown chic on all sides in a cast iron or dutch oven with olive oil. well s and p first.
Take chix out, add a zillion sliced onions, couple garlic cloves, maybe some thyme?
Brown for a bit, then add some chix stock, a can of tomatoes, more s and p, slash of wine, and the browned chix. cover and simmer for a really long time. Least an hour.
With rice or pasta?
I'll be there with White and Red.
*Wait! I like heat, so I'd have some red pepper flakes too, maybe some olives, if you got some frozen veggies, like peas, or artichoke hearts, or asparagus, even broccoli, God forbid I forgot a veggie!
Tostadas! I would boil the chicken in water with a spoon of Knorr powdered chicken broth, bay leaves, and a cut up onion and garlic. Put sliced up onion in a pan to start cooking them and once the chicken is done, shred it up and add it to the onions. Add a little broth or if you like it spicy, add in some salsa or even come chipotle peppers. Let it cook a few minutes to get teh flavors mixed and top a tostado. Of course, it could be tacos also. I like to make extra boiled chicken so that I can make chicken salad or top a regular green salad.
I'd go super unhealthy and do fried chicken and onion rings. Fajitas sound delicious, too!

Do you want a gourmet dish? I guy I know asked me to marry him when he first tasted this dish (he's married, and my husband was sitting next to me). Maybe you can fix this the next time you are thinking chicken and onions. It's Chicken Picatta from the Frugal Gourmet. Super easy. I've memorized how to fix it.
Dice one onion, couple of minced garlic cloves (or use pre-minced), couple of green onions, diced. Saute in olive oil until wilted. Remove from olive oil and reserve.
Pound thin however many boneless chicken breasts that you need. Sprinkle with salt and pepper and dredge in flour. Saute chicken breasts in butter over medium/medium high until golden brown on both sides (use a skillet that will accomodate your number of chicken breasts)
Mix 3 tablespoons dry sherry, 3 tablespoons lemon juice and one tablespoon chopped capers in a small bowl (use a little more if you have a lot of chicken). When chicken breasts are golden brown, pour liquid mixture over breasts. It will bubble up, so you can turn off the burner at this time. The liquid will reduce and make a nice gravy. Add reserved onion mixture on top of chicken and sauce. The sauce is the best part; and I love capers, so I add extra. By the way, the onions and capers can be scraped off if you have suspicious children. Serve with rice or quinoa, and put the sauce on top of the starch, too. Vegetable of choice.
I had a cat who loved Chicken Picatta and would go nuts whenever he saw me get out an onion. I think this recipe is in The Frugal Gourmet Cooks with Wine, which you can check for further information. I prepare the parts in advance so the dish gets done very quickly. You'll be a gourmet chef with very little effort.
Yum - fajitas! Season the chicken with some cumin, garlic, salt, lime, etc. (or a fajita marinade, even easier), grill it, saute the onions and some red peppers if you have them, toss it all together and put it in tortillas with fresh tomato salsa. Now I want Mexican food, and it's only 10:15 a.m.
