Mushrooms basically have no flavor. They just take on the flavor of whatever you're cooking. We used to saute them in butter. But that's not so healthy! So now we do olive oil and sea salt, maybe a little garlic power. You could also try boiling them in broth - vegetable, chicken or whatever you've got on hand.
I too love mushrooms.

I love them sauteed in a little butter.
Olive oil works too but there's something about butter that just seems to work so well with mushrooms.
Mushrooms do have a delicate flavor (and I love the different mushrooms you can get at the store - oyster mushrooms, brown, white, all of them).
Now eggplant - THAT you have to give a flavor (it's like natures tofu).

Slice the mushrooms and cook in skillet with a little olive oil until they get soft. Maybe add a little garlic powder/salt/pepper to taste.

http://allrecipes.com/ has lots of ideas for how to make food. If he liked the mushrooms in soup, consider boiling them. Or getting the ones in a can and warming them in the microwave. We often get sliced white mushrooms and fry them with a little olive oil or butter and garlic. They are good on the side, mixed with pasta or served over meat.

I make Thai food for a living. If you tell me what the soup was called I can give you an easy recipe for it. If it's the soup I think it is, the mushrooms were cooked in the broth which helped flavor the broth itself.

I created this receipe cut up some mushrooms, onions, celery, green pepper, zucchini and tomatoes, saute in a little olive oil, add salt, pepper, garlic powder, Italian Seasoning, ground bay leaf let cook until done or almost done. Make some burgers (turkey or beef) and cook in the same pan--just move over the veggies -- When burgers are done, remove to plates and top with veggie mixture then top with a slice of mild cheese such as muenster or mozzerella or gouda. I also will steam another veggie and sometimes have whipped potatoes or a salad.
It's really easy and you add what spices taste good to you. You can also add basil. I have used yellow zucchini to give it more color but both the green or yellow work.

AV suggested allrecipes.com. I use allrecipes.com a lot. They have a free side and a pay side. I've always used the free side and find it really great.

I read the reviewer's comments and use their suggestions a lot.

My favorite way to cook mushrooms is sliced in spaghetti, stew, strogonoff, and stuffed.

To stuff a mushroom, pull out the stem and wash the caps. I then take some hamburger (or sausage or buffalo burger, or diced chicken), cook it and put it where the stem used to be. I take some sharp or extra sharp cheddar or some mozzarella cheese and slice it into small squares. I put the mushroom caps with the meat in the middle in my frying pan with some EVOO. I turn the heat to medium low. When the mushroom caps are cooked, I will place a square of cheese on top of the meat. When the cheese melts, I serve the stuffed mushroom caps.

UMMM, good stuff!

BTW, my wife and I fed our kids what we ate from the very beginning spicy or not. If they learn to eat what you eat, they are not as likely to become picky eaters.

Good luck to you and yours.

I would let him taste them as is vs rinsing them first because he might like the flavors in the dish you were served. He'll also learn to try new things as well.

I have a side dish of sauteed tomatoes and mushrooms. I use baby bella whole mushrooms and cut in 1/2 but you could prepare them either way you wanted.

First I saute the mushrooms and chopped onion in a little butter in my sauce pan and when they saute a few minutes, I pour a can of diced tomatoes into the pan, mix well with the mushrooms, add salt and pepper to taste and then I add about 1/4 teaspoon of marjoram. I simmer them on low until most of the juice has evaporated. Tasty side dish.

I also prepare them stuffed and sauteed similar to the responses below and they are good.

Enjoy!

A side comment. My 18 mos old granddaughter likes spicy things. I would try giving him foods without rinsing them off. That way he'll develop an acceptance of a broader range of flavors.

You could heat up a can of soup, adding the sliced mushrooms to be cooked in the broth. Do not boil the broth. A gentle simmer will work best. This would be closer to his first experience.

Usually, I just saute the sliced, or whole if they're small, in a bit of butter and/or olive oil. The mushrooms do taste a bit different when cooked this way instead of in broth.

Just throw them in a saute pan with some butter and let them cook on low until they are shrunken and soft. Yum!
