this is my very own recipe for 'TurkeyRoni' (instead of Beefaroni) but you could substitute ground chicken. I don't eat beef so I substitute poultry all the time. This is yummy and just one pot.
1lb. ground turkey (or chicken)
1 can tomato sauce (or 2 cups crushed tomatoes)
1 can diced tomatoes (drained)
2 cups dry macaroni
1/2 tsp. oregano
1 tbsp. sugar
2 tbsp. tomato paste
1/4 tsp. garlic salt powder
2 cups hot water
1 cup shredded cheddar cheese
1/4 cup romano or parmesean cheese
In a large pot (I use a dutch over)
1. cook turkey (or chicken) and drain meat
2. Add macaroni, tomatoes, tomato sause, water and seasonings
3. Bring to a boil, then cover and let simmer until noodles are tender and liquid is absorbed (about 20-25 minutes)
4. Remove from heat and stir in cheeses
We LOVE this recipe! I wanted something that was one pot, and had added veggies so I took a little of this recipe, a little of that and added stuff along the way. (I must admit, I am so proud of myself for this). Sometimes I will add canned carrots cut up small for some added veggies. You can add or substitute whatever you want. You just need the macaroni to water ratio. I added the tomato paste in there not too long ago to give it a little more tomato flavor. You could always do without the cheese if you wanted something a bit lighter.
