I am wondering if any one has or knows a good link to a brownie recipe with mint frosting on top. I love buying these at the grocery store or bakery, but I would love to make them myself so I can have them whenever I want. If anyone knows a great one please let me know! THanks.

Thanks everyone! I think I'll try them all gradually and just see what my hubby and I like best. The recipes sound great!

Use what ever recipe you want I use the one bowl recipe from the inside of the unsweetened chocolate squares.

Sprinkle the top of the batter with mint chips (found by the chocolate chips in the store. Bake as usual, then when it comes out use a butter knife to smooth the top, some will sink a little, but they are good.

I have also tried this on top of chocolate zucchini cake and no one knew that there was zucchini in them.

these are the best!! and are pretty easy to make too!
MINT BROWNIES

BROWNIE:

1 (9x13 inch size) pkg. brownie mix

FILLING:

2 c. powdered sugar
1/2 c. butter, melted
2 tbsp. milk
1/2 tsp. mint flavoring
7 drops green coloring

ICING:

1 c. chocolate chips
6 tbsp. butter

Prepare brownie mix and let cool.

Prepare filling and spread on cooled brownies and put in refrigerator for at least 30 minutes.

Melt chocolate chips and butter in double boiler or microwave. Spread over top of mint filling. Serve chilled to prevent chocolate and mint from melting.

Oh I add about 1/2 tsp of mint to the icing part too, but I really like mint!!

We make mint brownies a lot during the holidays. I use a devils food cake mix because they are usually much cheaper than brownie mix:
1 devils food cake mix
2 eggs
1/2 cup oil
1/4 t mint oil (for candy making, not extract)

Bake in a greased 9x13 pan for about 23 M. at 350 degrees

Sometimes we mix chocolate chips and/or crushed candy canes in the batter before baking.

If you had your heart set on frosting, I think you could use canned vanilla (or homemade) and add a bit of mint oil. Extract might work, but the concentration of oil is fabulous.

I too LOVE mint brownies...this is a great recipe I found on Foodnetwork.com to make them at home! And it is the BEST!!! Hope it helps!

Ingredients
1 cup sugar
1/2 cup unsalted butter, softened, plus more for greasing pan
1 cup all-purpose flour
2 cups chocolate syrup
4 large eggs, beaten
1/2 teaspoon salt
1 teaspoon vanilla extract

Mint topping:
2 1/2 cups confectioners' sugar
1/2 cup unsalted butter, melted
3 tablespoons creme de menthe liqueur

Chocolate topping:
1 cup semisweet chocolate chips
6 tablespoons unsalted butter

Directions
Preheat the oven to 325 degrees F. Butter a 9 by 13-inch pan.

Cream together the sugar and softened butter. Stir in the flour and mix well. Add the chocolate syrup, eggs, salt, and vanilla and mix everything well. Pour the batter into the prepared pan. Bake for 25 minutes. Let cool.

For the mint topping: Mix the confectioners' sugar, melted butter, and creme de menthe together until smooth. Let cool slightly and spread over the cooled brownies.

For the chocolate topping: Melt the chocolate chips in the butter and pour over the mint topping. Let the brownies and toppings cool completely and cut into 2-inch squares

Here's a very easy way: Bake your favorite brownie recipe (from a mix or from scratch). About 5 minutes before the brownies are done, quickly remove the pan from the oven and completely cover the top with unwrapped York Peppermint Patties (work fast, the peppermint patties should be already unwrapped and ready to use). Make sure the brownies are completely covered with the patties; overlapping is fine. Return the pan to the oven for the final few minutes of cooking. Remove the pan and swirl the peppermint patties with a small spatula or butter knife. They won't be completely melted, just softened, and that's what you want. Let them cool and cut as usual. You can lightly sprinkle the cooked brownies and peppermint patties (after removing them from the oven after the final few minutes) with finely crushed candy canes or other hard peppermint candies for a pretty finish at holidays.

Make your fav brownies (I like the triple chocolate Hershey's/Betty crocker brownie mix) then right when they come out of the oven add Junior mints on the top. Let them melt a while, if they need some help put the pan back in the oven after you've turned it off so it melts them better. As soon as they're melty spread the melty, chocolatey yummy stuff around on the top of the brownies :) Easy enough?? enjoy!

I have a terrific Mint Silk Torte recipe from The Pampered Chef that uses a brownie mix. It's made in torte pans but you can easily change the recipe to make them look like traditional brownies. There is mint in the brownie mix as well as on the ganache that tops them. It's also a breeze to make. Just send me a note with your e-mail if your interested and I'll forward the recipe to you.

I just use what ever brownie recipe you want. Use whatever frosting recipe you want (like a cream cheese frosting). After the frosting is mixed...add a couple drops of mint extract and a few drops of green food coloring until you get the right taste and the right color. Spread it on the cooked brownie's. Melt chocolate chips in the microwave stirring every 30 seconds until melted and using a knife or a spoon drizzle the chocolate over the frosted brownies. Eat to your hearts content!
