Dear L.,
Stouffers has a yummy Frozen creamed spinach meal at the grocery store. Just throw it in the microwave and cut it up and serve. I've also used it to stuff chicken breasts and bake. You just get 4 chicken breasts, don't microwave the Stouffers Creamed Spinach, but cut it into 4 squares, place each square on top of each chicken breast and fold and hold with a toothpick. I usually place them in an Olive oil pan for about 4 minutes on each side before baking. Then I bake in over on 350 for 25 minutes. It's one of my favorite meals. Good luck!!!

have you tried as a salad. My boys like the idea of spinach also (thanks to the same Popeye) but won't even look at it cooked. Use it instead of regular salad greens or in addition too.

I throw some into my lasagne or stuffed shells. Just chop it up and if you want, steam it a little. Put it in with the cheese filling and bake like normal.

boil water, drop in fresh large bag of spinich for like 20 seconds literally, JUST enough to change dark green, then pull out of water & drop in blender with a box of cream cheese, can of evaperated milk, 1 cups parmasan cheese, blend to liquid, then add salt, pepper & basil to taste, and some garlic if you like it.
Pour over linguini noodles.
We call it Tallerins Verde, its peruvian, and my sons LOVES green spagetti! we tend to serve with meat.

Spinach is my favorite super-food, and my family eats it every day. Here's our three favorite ways to eat it:

Green Smoothie: just blend up some fruit (I like to use a granny smith apple, a pear, some frozen mango) add a couple handfuls of raw spinach, add enough oj or water to make the whole thing blend up nicely, splash a little bit of lemon juice in for a nice zing and enjoy! Maybe it sounds weird to you, but it is yummy!

Salad #1: spinach, sliced thin granny smith apple, raw almonds (so healthy!) baby carrots, craisins, grated swiss cheese, bacon bits, little bit of red onion, poppy seed dressing.

Salad #2 (my personal favorite): spinach, sun-dried tomatoes (I buy them in a jar at costco), crumbled feta, sliced kalamata olives (also costco), bacon bits, pine nuts, olive oil and balsamic vinaigrette.

Hope you enjoy them. We just keep the ingredients on hand and whip up a salad for almost every dinner, takes five minutes tops. Same with the smoothie. It makes a great breakfast and keeps well in the fridge for a couple of days.

I've also replaced spinach for lettuce wherever I can. I use it on my sandwiches, tacos, etc.

Try The Pioneer Woman's recipe. I love her stuff... http://thepioneerwoman.com/cooking/2008/04/creamed-spinac...

I haven't tried this recipe but I've tried a bunch of others. Plus, she's really entertaining to read and she takes amazing pictures of her foods.

Hi L.,
I don't have a recepie on hand, but maybe try a spinach dip. I know that if you look on Betty Crocker.com or philsbury.com they might have links that could set you up with some awsome spinach recepies. Maybe even try Rachael Ray.com. Hope this works.

My German Grandma had the best and everyone who has tried it loves spinach even the die hard haters.
Creamed Spinach
Saute chopped onions in butter 1/2 to 1 stick of butter (usually one onion)
At the same time cook spinach in microwave not over cooked but make sure it is hot. Amount depends on how many you are feeding. Make sure you put a lttle salt on the spinach and Break it down so it cooks evenly. I use frozen spinach.

Once the onions are translucent mix about in about 1/2 cup of flour until it is thick. If you need more flour use it.
Add juice from the spinach until it is soupy. When the flour is totally mixed together, Add Spinach and taste to make sure it has enough salt and serve.
Sorry I always cook this by taste and feel the way I was taught. Grandma was a fab cook but never had use for measuring things.

She also has a great butter cookie reciepe I make at Christmas.

Hi L.,

I didn't read all the responses so hope this isn't a repeat. My husband loves this creamed spinach. He says it's WAY better than Boston Market.

Savory Creamed Spinach
1 (10 oz) pkg frozen, chopped spinach
3/4 cup evaporated skim milk
2 tsp cornstarch
1/2 cup finely chopped onions
1/4 tsp dried basil
1/4 tsp dried oregano
dash of nutmeg
3/4 cup (3 oz) finely shredded Monterey Jack cheese (I use whatever kind of cheese I have on hand, any kind is yummy)

Cook the spinach according to the directions on the package. Drain the spinach well and set it aside.

In a small bowl, stir together the milk and cornstarch. Set the mixture aside.

Lightly spray an unheated medium skillet with olive oil no-stick spray. Add onions, basil, oregano and nutmeg. Cook and stir over medium heat until tender.

Stir in the milk mixture. Cook and stir until thickened and bubbly. Add cheese, then cook and stir until melted. Stir in the spinach and heat through. I add a bit of garlic salt too. Enjoy!

You use exactly half the can of evaporated milk. I freeze the other half until the next time I make this.

Also, put some frozen chopped spinach in manacotti or lasagna. Or a ricotta and spinach calzone.

We eat a lot of spinach salads. Just use spinach leaves instead of other lettuce like iceberg or romaine. It's great with everything from ranch to vinagrettes. You can also thaw out frozen spinach and drain it really well and add it to scrambled eggs with some onions and tomatoes or make a quiche.

When my 16 yo was little he only liked spinach if it was raw unless its in White Pizza.

Saute mushrooms, onions & spinach in 1 tbsp olive oil.
Spread this over a Boboli pizza bread.
Cover with Mozz cheese.
Bake 10 mins at 400* until cheese is lightly brown.

I also like to steam it lightly then toss it with toasted sesame oil.

Do they like eggs? You could spinach in an omelet or a quiche. If they like raw spinach you could add it as part of a sandwich. :-)

Ok, I'm pretty much of a health nut and I couldn't help responding to this spinach request! I've got the best tasting solution for adding more spinach to your diet. I make this almost daily.

Green Smoothie
2 cups water, or to desired consistency
1-2 oranges
2 bananas
1-2 pears or apples (with peel on)
2 handfuls of spinach
Ice

Blend the fruit and water until blended and then add greens. Blend until the greens have ruptured and have a nice green color. Then add ice.
Variations: add fruit as it’s in season and affordable – pineapple, grapes, and mango are good. Use whatever you have – be creative and adjust to fit your needs. I try to steer clear from strawberries because they make it an undesirable color, but it still tastes yummy! Lately I've been using a frozen fruit mix from Costco that has peaches, pineapple, blueberries and strawberries in it.
My kids love this and drink at least a cup a day and love to help me make it!

This is our family favorite....

Spinach pasta bake

Cook 1 lb. bag of rigatoni pasta al dente, strain, and rinse with cold water (this helps it from cooking more) and set aside.

Fry 1 lb. of italian sausage, strain, and sautee 1 small onion, and two garlic cloves in the remaining grease.

In a large cassorole dish, put one layer of noodles on the bottom, followed by sausage and onions, one cup of spinach, one half jar of marinara sauce, and half cup of mozzerella. Repeat layering and bake for 40 minutes at 350.

My best answer would be go to www.recipezaar.com . You can type in spinich either just the way it is, or you can click the ingredient button. It will spit our A LOT. You'll have a hard time picking! Also, they are rated and have comments so you can know which ones people have tried and if they tweaked the recipe at all.

I don't have a recipe, but I give my child this product you can find in the frozen section of most conventional grocery stores. It is made by Morning Star and they have a line called "Veggie Bites." In this line they have a flavor that is Spinach Artichoke that my two year old son loves. Hopefully this helps!

At our house, we put it (fresh) on pizza under the cheese. I make the dough in the breadmaker, and make a simple marinara sauce, but if you don't like to cook, a Boboli and a can of Ragu are great! I use a lot of spinach, too, about a half of a bag per pizza. It looks ridiculous before it goes in to the oven, like a snow covered mountain, but looks like regular pizza and tastes great when it comes out! Good luck on your culinary adventures!
