Need Casserole Recipe That Will Freez Well

I know someone who needs this recipe ASAP because her mom will be having surgery soon! and she has to go out of town and needs to make alot of food ahead of time and freez it before she leaves to make it easer for her mom.

What can I do next?

For a quick lasagna buy the frozen big cheese ravioli. Dump it in the baker, dump in a can of spaghetti sauce and cover with cheese and foil and bake it up. You add a couple slices of garlic bread (frozen is easier) and a side salad and it'll feed a lot really quickly with very little effort. *You don't have to worry about adding the ricotta cheese since it's inside the ravioli. And there's no make ahead with that either.
Chili is easy and freezes well.

The book "Once a Month Cooking" has great recipes that are designed to be made ahead and frozen... we've used those recipes for years and love them.

Hi Ms C,
Let's go back to basics on this one, because your friend may not have a lot of prep time on her hands either. Things like lasagna (prepared with low sodium itmes and ground turkey, cut and individually wrapped), pre-prepared spagetti meat sauce (frozen in non-freezer-burn bags) just to be heated and poured over pasta, any type of meat (pre-seared and popped in the oven for a few mins of reheating), and Green Giant makes some wonderful crispy (vitamins maintained) individual serving size veggies that pop in the microwave for a few mins. Pasta and rices can also go in the freezer (with a few drops of water in the bag) after preparing them.

Maccaronie casarole! Its good cook a bag of maccaronie drain it add a half block of velvita cheese cut in cubes helps to melt it! Then add one can of corn a big can of cut up whole tomatoes in a can cooked hamburger meat! Bake it all in the oven together or cook it on the stove for until all the cheese is melted and then serve it! You can freese it as well in sandwich baggies to heat up indivdually or put it all in a big freezer bag for another dinner! My mom used to cook it for us when we were little and I still love it to this day!

I highly recommend a book called "Lo on the Go". It's a cookbook with simple delicious recipes that will freeze well. I cook from it 4 days a week.

These are not really caseroles, but Stouffers has some excellent frozen dinners. The prices are comparable with buying the items and fixing them yourself and the lasagna, meatloaf, chicken parm, and mac and cheese are pretty darn good. I am 5 months into a high risk pregnancy and not able to stand to cook good home meals and these have really been a life saver. They come in sizes from single to extra large party size. They also microwave well as leftovers. Good luck and take care.
