Anything with "pomade" in the title/description should hold your little one's hair the way you want it. And, for a three year old, one small jar will last forever.
I get DS's hair cut about once a month because it grows so quickly. I've never bothered to style it, but the last time we got it cut, they girl styled the front bangs up kinda and it was really cute. I didn't think to ask what she used at the time and haven't been back for his haircut since. Anyway, I'm looking for recs to use for styling his hair. I know they said I'd need something heavier than my products because his hair is so fine still. I think the stylist suggested a type of wax maybe?
eta - One thing I forgot to mention was that DS has eczema and I use CA Baby bath/shampoo products.

my son use "moco de gorila" gel level 9 and it works better than wax
My husband uses D:fi (pronounced "defy"). It works great! You can pick it up at Ulta and I'm sure other places sell it as well.
If your concerned about natural products, I would suggest you try kiehls:

You can get this at Neimans or Saks if you don't want to buy from their site and I think they have a store in Highland Village.
