I'm really, really pregnant and not feeling inspired. Help me come up with some recipe ideas? I am looking for healthy dinner ideas, dairy free, inexpensive.

Kebobs on the grill with a salad
I like to make a pasta salad with cucumbers, green peppers, carrots, tomatoes, red onion, radishes, celery stir it together in a big bowl top with Wish Bone Lite Asian Seasme & Ginger dressing. You can add what ever veggies you like. It lasts a couple days in the fridge and it's a nice cold healthy meal. You can add tuna or canned salmon.
Quinoa with corn, black beans, red pepper, lemon juice, salt and pepper, and chopped cilantro. Works warm, but better chilled for summer. High in protein, which is really important in late pregnancy!
Enchilada bake- layer toritillas, enchilada sauce, taco meat (I use veggie crumbles or fake chicken with taco seasoning), black beans or refried beans in a lasagna pan and bake. You can top with vegan cheese if you like.
Cheating fish/shrimp tacos- just use the frozen, breaded fish or popcorn shrimp that you cook in the oven, corn tortillas, shredded cabbage or lettuce, fresh lime and cilantro, jalapenos if you like spicy, sauce is salsa and mayo stirred together!
What about just a great salad?
Salads can be anything really.... what you already have on hand per veggies/greens:
adding some shredded chicken or beef, or beans/chick peas, sprouts, sunflower seeds, dried cranberries, cut up oranges, herbs, boiled eggs, deli meat, cubed boiled potatoes....
ANYTHING you have on hand.
And toss it all with a great salad dressing!
And eat it with toasted bread.
Well, for a quick one I would say shrimp on the grill or pan seared with olive oil and a spice blend you like ( I've been using a Greek one lately we all like-Cavender's)....roast whatever veggies you have on hand...cut in pieces and put in the oven with olive oil for about 25-30 min. Maybe serve with brown rice or couscous.
If you have a crockpot, one I've liked lately is a version of Steak Fajitas...brown a package of round steak or lean steak in frying pan..
Whatever is on sale...I've used a small roast for this or even stew meat for this.
.then put in crockpot with a little water so it doesn't dry out and fajita seasonings...I usually just use a combo of chili powder, cumin, onion powder, garlic powder...but you can use the packs of seasonings too.
I just like to reduce the sodium so I make my own.
Cook in crockpot on low for 6-8 hours or until steak falls or cuts apart easily...Then I cut up 2 red pepper and about a half an onion and either sauté in skillet or add to crockpot last 1-2 hours of cooking.
Then combine with meat and serve on either flour or corn tortillas with your favorite salsa, cheese, etc. It's not a lot of work, but I think it tastes like I went to more trouble than I did!
This meal could easily be doubled or frozen too.
Chicken - marinate in teriyaki sauce, cut into small pieces, stir fry it on the stove and serve over white rice. Or marinate in lemon and herb and serve with pasta. Both are good with pretty much any veggies - steamed, roasted or frozen ones sauteed on the stove (even in the same pan as the chicken)
Turkey/Veggie/Hamburgers - cook on the grill along with corn on the cob, zucchini, or veggie kabobs (bell peppers, mushrooms, etc) Make it all on the grill and there's no pots or pans to wash
We make easy homemade pizza with Trader Joe's pre-made dough and Daiya Cheese (100% dairy free). Get any sauce you like and whatever toppings - make a veggie lovers pizza and it'll be healthier.
A popular easy supper around here is Zataran's Caribbean rice with cut up chicken breasts and a can of pineapple chunks (drained) added into it.
I also have a cabbage jambalaya that's always a hit too.
I substitute 2 lbs loose sweet Italian sausage for the meat and pre-shredded coleslaw cabbage to save some time.
spaghetti and meatballs...I make a batch of sauce and freeze it in individual containers. Get the Barilla healthy spaghetti with fiber etc.
I love roasted veggies, especially when pregnant.
Roast any veggies: zucchini, onions, garlic, eggplant, peppers for Italian/Greek and toss with pasta, fresh spinach, and dressing.
Roasted potatoes with EVOO, garlic, parsley, S&P, dill.
Roasted sweet potatoes with EVOO, a dash of OJ, paprika, Season Salt, chili powder.
Spanish rice and black beans.
We always keep a big bottle of Yumm sauce in the fridge. We get it at our local Cafe Yumm (http://www.cafeyumm.com/locations.html) but I understand it's also available at Whole Foods.
Just heat up a bowl of beans, rice, and veggies, top with salsa, and a nice blob of Yumm Sauce. Super easy, healthy, and the whole family LOVES it!
