Happy Holidays Ladies!
I have a question...I'm looking for some quick/yummy recipies that I can make to feed my family. My husband and 15 month old son eat just about anything, but I'm limited in my cooking skills. (We joke that my smoke detector is the timer and when it goes off my food it done, haha). However, I do make killer meatloaf, spaghetti, chicken parmesan and beef stew, but after that I tend to resort to take out (which we all know is not usually very healthy). I would appreciate any good (EASY) recipies that you would like to pass along. Thanks a ton!

Here is an easy Meatball Recipe (its easy/tasty/and most have all the ingredients already in the house. I will put them on top of egg noodles too.)

Meatballs
1 lb extra lean ground beef
10 crushed saltine crackers
1/8 cup italian dressing

Sauce
1/8 cup italian dressing (yes, you need this twice)
1 beef bullion cube
1/2 cup water
1/2 cup sour cream
Cheddar cheese shredded (if desired)
Green onion (if desired)

Mix the meat, crushed saltine crackers and 1/8 c dressing together and form into balls.

**I usually double this next part so I get more sauce**

Place additional 1/8 c dressing into a skillet and heat up. Add meat and cook approimately 8 minutes or until browned (mostly cooked). Dissolve 1 beef bullion cup in 1/2 cup water and place into skillet with meatballs. Continue to simmer about 5 minutes. Take 1/2 cup sour cream and add to skillet - heat until warm. Top meatballs with cheddar cheese/green onions and let melt. Put on egg noodles or eat alone.

This is a SUPER easy chicken dish that is delicious!

4-5 Chicken breasts
1 can cream of chicken soup (low-fat, low-sodium)
4-5 slices cheese (swiss, pepperjack, muenster, ANYTHING!)
1/3 cup white wine (I use red when I don't have white)
croutons

Salt and pepper the chicken breasts. Mix the wine and soup in a casserole dish until mixed and soup is thinned out. Place chicken in dish. Put slice of cheese on each breast and cover with croutons. Try to use a dish that allows the sauce to mostly cover the chicken. Cover with aluminum foil and cook at 350 for I hour.
THAT'S IT! After an hour, just make sure the chicken is cooked through and then stir the sauce up.
It's great over egg noodles and steamed broccoli as your veggie!

They have some great and easy recipies. I suggest reading peoples reviews as well because they give you great suggestions about how to tweak a recipie if needed.

I am in the same boat...but this site has helped a ton!

I feel the same way! I have the same few meals I always make, but then get kind of stuck. So, thanks for your recipe! Here are a few I make that are pretty simple. Nothing fancy, but my husband likes them and they are easy to put together when I have to work.
-Tacos,Burritos or Enchiladas: just buy the seasoning packet and instructions are there.
-White Chicken Chili: Kroger has a seasoning packet for this too. You really just add chicken and beans and you are done. It is so easy and so good!
-Pork Roast/Pot Roast: Throw in a crockpot with potatoes, carrots, onions, Lipton Onion Soup seasoning packet and a little water. Cook on the lowest setting.
-BLTs and Soup
-French Dips: Put roast beef lunchmeat and swiss cheese on hoagies. Microwave to warm up. Buy the packet of Au Jus mix to dip them in.
-Stuffed Peppers: Mix ground beef with Lipton Onion Soup mix, Shredded Cheese, Chopped Onion, Can of Chopped Tomatoes. (You could probably even use the same mixture you make for your meatloaf too) Put in scooped out peppers and top with spaghetti sauce. Bake or cook in crockpot until meat is cooked.
-It is funny, but my husband actually likes breakfast every once in a while too. He used to have it when he was a kid. Pancakes and sausage or Eggs and Bacon or something. We don't usually take the time to make big breakfasts on the weekends so it is nice to have it at dinner sometimes!
-Chili Dogs and French Fries. I just buy the can of Chili No Beans.

I have a chicken recipe that everyone raves over and its supper easy. Grillmates makes a marinade in a package, its dry ingredients. They have several flavors but I like the Zesty Italian or herb, not sure which one its called. You mix the dry ingredients in the package as the directions call, water, oil, vingar. Then it says to marinade and discard the marinade but I do not do it that way. I mix it by the directions, add the chicken and dump it all in the crock pot and put it on low or high depending on how much time I have and its good to go. It is soooooo good. I usually make mashed potatoes with it and plot the chicken right on top the potatoes. Its to die for. Let me know if you try it.

If they eat everything, Try mixing everything together and stuff into a wrap or pita, make mini veggie meat cheese pizzas. They are fun and u can make faces on the wraps for your lil one (although hubby might like a smiley face on his wrap once in a while too.. he he )

Here is a fast and easy recipe both my boys and my husband and I really like.

Crunchy Chicken

1 1/3 cups French's Orginial French Fried Onions (I usually add a little more depending how many chicken breasts)

1-2 eggs beaten depending how much chicken you are making

I usually make 4-6 boneless skinless chicken breasts. The recipe calls for 4 chicken breasts

Put the French Fried onions into a plastic bag and crush them

Dip the chicken in the egg and coat it with the onion crumbs

Bake at 400 degrees for about 30-45 minutes. It usually takes longer but check it after about 40 minutes

N., maybe try modifying your favorite recipes with alternate ingredients. Different sauce on the spaghetti, different shapes of pasta, pork chops instead of chicken breasts, ground turkey meatloaf. Even slightly different seasonings can make a difference. Try getting ready-made pizza crusts and be creative about the toppings. Just about any ingredients (including leftovers) can be made into a stir fry or a quiche/frittata. Here is a good website: allrecipes.com

Check out allrecipes.com they have alot of great easy recipes. I've tried many and love them all. Also if you go to the kraft foods web site you can request there kraft food and family magazine which is free. You get it about 4 times a year and it has alot of easy recipes in it also.
