Hi!

So I have brocoli and sweet potato fries planned for dinner tonight :-) any non meat quick main dish ideas?

Eggplant Parmesan

Just use jar Marinara sauce
slice up eggplants
use packaged shredded Mozarella cheese and Parmesan cheeses.

layer in baking pan:
sauce, eggplant, cheese, sauce, eggplant, cheese, for about 3 layers.
Bake at 350 until cooked/bubbly and browned/toasted on top.

You could do broccoli casserole with rice and cheese, but then you'd have rice and sweet potatoes, so maybe not. You could add some beans, peppers and onions and do veggie quesadilllas or fajitas maybe. Are the fries pre-cut or do you have whole potatoes? You could do a baked sweet potato and top it with broccoli,cheese and onion. I use sweet potatoes the same way I would regular potatoes and they taste super yummy that way...with some cheese and sour cream!

These two items really call for a protein, so I would say....
- veggie burgers
- broccoli and cheese omlettes

If your not wedded to both, then broccoli and cheese soup or "breakfast" of eggs, fruit and sweet potato fries chopped with pepper and onion (like homefries)?

In my home my go-to meal is a tostada. The shells are inexpensive (by the tortillas or mexi food) and the toppings are traditionally a layer of refried beans ( i just smash whole cooked pintos), optional meat, lettuce, tomato, cheese, salsa, guacamole, and/or sour cream. It takes minutes to throw together and it's a fairly balanced meal and unlike tacos, it usually fills us up with two each. I don't know if it will go with your plans, but it's a good resource on a crazy day. good luck!

thats tough because you already have a veggie and a carb. You need a protien. Cheese maybe? Or a bean? How about black bean quesadilla

Easy way out would be to pick up some Qorn cutlets at the store or veggie burgers. They can be prepared in the oven, pan, or microwave.

This recipe is good in a pinch for Dinner or breakfast! It just depends on the ingredients! It is a kind of Quiche casserole.
Whip together 8 eggs and 1/2 cup flour
add 1/2 cup cream (you can substitute milk if you don't have cream)
1 cup fresh grated parmesean (you can substitute any kind of cheese)
ADD any ingredients you have that you want to add..... :) onions etc.. season to taste...
Bake @350 for one hour remove and cover with marinara sauce and more cheese... and bake for another 15 minutes and wahlah!
My in a pinch hit that began years earlier when I said yes to my daughter on a whim when she asked if a bunch of a girls could spend the night and the next morning I hadn't gone shopping for slumber party and found myself with a bunch of hungry girls... so made the concoction above and added tater tots, sasuage bacon, cheese and wahlah... they were clueless and loved it!

Mac and cheese with whole grain pasta is high in protein and a kid favorite.

We also like homemade bean burgers: Throw some chopped onion/garlic/shallot and mushrooms (optional, but I like them) into a pan with a little oil and saute until softened. Mash 1 can of beans with a fork (I like black eye peas, but others work too). Chop ~1/2 cup of walnuts or pecans and add to the mashed beans. Add the sauted onions and mushrooms. Season to taste with salt, pepper, basil, garlic powder, grill seasoning...whatever you like. Add one egg beaten (or a bit of water if you want them to be vegan) and some bread crumbs until they can be formed into patties. With wet hands form patties and pan fry 3-4 minutes per side until golden.

Variations:
Use white beans and add chopped spinach and feta to make "spanikopita" burgers.
Use black beans and some shredded pepper jack to make tex-mex burgers. (great served with regular or mango salsa)
