I love slicing it and putting it in a frying pan with hot olive oil. Saute it and then add chopped onions, garlic and fresh chopped tomatoes (canned if you must). Season with salt and pepper to taste. By coating with the oil before adding anything liquidy, it cuts down on the gumminess. Its ready when everything is tender and the flavors have a chance to meld. Yum! You could throw in some sausage or shrimp, but I like it without just fine.
