Zion and Bryce Canyon....period..
My husband is working in Salt Lake City for about the next week. (Neither of us are familiar with Utah at all!)
He is not expecting to have much free time, but I'm wondering, if you're familiar with the city, is there one or two things you would say he "must" see/do while he's there, IF he has time?

Zion and Bryce Canyon....period..
I grew up there, it's a nature lovers dream. If he has time, tell him to head up the canyon to Park City or up another canyon in Provo called Sundance (the ski resort Robert Redford owns) and hike near Bridal Veil Falls and treat himself to Robert Redfords best restaurant called The Tree Room-fantastic!! The Salt Flats are really neat, tons of music videos have been filmed out there as well as world records for fastest driving happen there. It's just neat to see. Another thing to see is the Mormon Temple grounds. You don't have to be Mormon, it's just amazingly beautiful and the visitors center has the most gorgeous Christus you'll ever see. It's a peaceful place and a history of Utah that's great to understand and say you've been to.
I would suggest he walks around Temple Square downtown. It is free, and there are temple ground tours or he can just walk around. The Salt Lake Temple is absolutely gorgeous. It has an interesting history; it took the Mormon pioneers 40 years to build and they hauled the granite blocks from the canyon using teams of oxen. There are several other church buildings near the temple that are all very interesting, also the Cathedral of the Madeleine is nearby.
He might enjoy a drive up O. of the canyons as the leaves are all turning. Park City is up Parley's canyon which is not too far from downtown SLC. If he is into hiking at all, Millcreek canyon (and any of the canyons) have lots of trails. There are always lots of outdoor enthusiasts out walking, climbing and biking and they are usually super friendly.
Those are probably the 2 things I would suggest since he is short on time. Hopefully it will be good weather when he visits, because it is very beautiful here but the weather can turn on a dime!

*added: I would check the weather report. If no rain, perhaps a round of golf? I would really suggest anything outdoors because the view of the mountains and the valley is O. of the best things about SLC. Also, bring a coat. It snowed last week. (This week was really warm - 75 degrees average- it goes really back and forth weather wise here!) I also hear really good things about the restaurant The Roof which is downtown "With breathtaking views of Temple Square and Downtown Salt Lake City, The Roof is a fusion of inspiring views and extravagant food. Chef Pedro Mauricio prepares international cuisine with daily regulars for a dynamic menu. Additionally, we offer a world-renowned dessert buffet with an abundance of delicious choices" Seems like a great way to enjoy the scenery. The Lion House Pantry is also downtown and is a restaurant in O. of Brigham Young's residences (he was the leader of the Mormon Pioneers).
There is a new aquarium in Salt Lake. Personally, I have not been there but my kids say it's nice. The tour of the temple grounds is nice. I'm not sure when they put up the Christmas lights but that is so beautiful.
it may be too far to visit zion or bryce, but if you can, do! if not, maybe you can get outside the city and hike mt. timpanogas and visit the caverns there. spectacular.
but SLC is a beautiful city regardless. whether you're LDS or not, the tabernacle is worth a trip.

While I haven't lived in SLC, I've traveled there...If he has a car - there is a ton to do. It's a magnificent city!!
The Mormon Tabernacle and grounds has a great tour...I think it's free.
Bryce Canyon and Zion National Park are a drive - but well worth it. There is Liberty Park as well as the John Smith Museum. There is also the Family Search Center - if he wants to "dig" into family history!!
The "MUST" if he has time and a car is Zion and Bryce Canyon...
