I am looking for an excellent Spanish rice recipe. I usually just make the one in the box from the grocery store, but I'm wanting to make it homemade. Thanks!!

This one came out well when I tried it:

SPANISH RICE from COOKS.COM
------------------------------

1/4-1/2 cup vegetable oil
1-2 cup long grain rice
1/4-1/2 teaspoon salt
1-2 tomatoes, diced
1/2-1 small onion, diced
3-6 cloves garlic, minced
1-2 teaspoons cumin
2-4 tablespoons tomato paste
2-4 cup water, boiled (or stock)

In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3-5 minutes.
Add salt, cumin, onion and garlic and sauté 1 minute. Add tomato, tomato paste and boiling water. This should boil almost immediately; turn down heat to low, cover and cook for about 20 mins, or until water has evaporated. Serve.

Mexican Rice
(My Old Family Recipe)

1 cup of white rice
1-2 tablespoons/cubes of Knorr Chicken Boullion
1-2 cloves of garlic(cut in 1/2)
A few slices of onion
A capful of cooking oil
1 samll can of tomato sauce(use 1/2 of can)
2 cups of water

*(Optional) A sprinkle or pinch of ground cumin, oregano, garlic and onion powder. Adding peas and carrots is a nutritious option as well.

Brown 1 cup of white rice, onion slices, and cut up garlic with a capful of cooking oil (The aroma well be Awesome). Then add water,tomato sauce, Knorr's Chicken Boullion and other optional items if desired. Bring to boiling, then lower heat to low. This is a good time to taste the liquid to check if it is too salty or needs more seasoning. If you find it is too salty add about 1/2 to 1 cup of water. If you find it needs more seasoning add a teaspoon of chicken boullion to taste. Once it begins to boil, cover and let simmer on low heat for about 20 minutes. Rice is done when the grains are split in the middle. If you find that the rice isn't done yet add a 1/2-1 cup of water and let cook until rice is split. Note: If you use the Knorr's Chicken Boullion Cubes, make sure they dissolve all the way or else you might end up with very salty spots. Also If you don't like the onion and/or garlic it can be picked out or thrown in a blender.

1 can beef broth and 1 can water
1 tomato, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. cumin
1 c. white rice
Brown 1 cup rice in 3 teaspoons olive oil.
Add broth and water to rice; cover and cook until liquid is absorbed about 40 min slow and covered
Add the rest of the ingredients.
Mix and serve.
