We have dear friends whos little boy was struck by a car yesterday and airlifted to local Childen's Hospital. I am taking the family dinner tonight and just talked to Dad about food allergies and food dislikes or likes. He menitoned the whole family likes Chicken&Broccoli Casserole. I have had it before at a church potluck but have never made it before. I would really like to take it to the family because I want something I know they will all eat...it is a very large family. (Who wants pizza and spaghetti for a week which tends to be the go to meals when you are taking to a family.) Sooo please help me give this family a little bit of "comfort" with this comfort food.

Please send me your recipe if you have a moment to pass it along. I appreciate your thoughtfulness!
The young child is ok...broken bones, jaw&knocked out baby teeth. Phew!!

What can I do next?

I use this one, just made it on Sunday, actually:

Ingredients

2 cups water
2 cups uncooked instant rice
2-3 chicken breasts, seasoned, cubed and cooked
1 (10.75 ounce) can condensed cream of mushroom soup (or broccoli)
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup milk
1 (16 ounce) package frozen chopped broccoli
1 small white onion, chopped
1 bag of shredded cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes. (OR, I use the frozen jasmine rice packets from Trader Joes; cook it first)

Cook chicken in pan with seasoning, olive oil and chopped onions.
In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, milk, broccoli, onion, and cheese.

Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

It's very good!!!

The one i make is a bag of egg noodles, a couple broccoli crowns steamed and chopped and chicken breast or thighs cooked and cubed. I add sour cream and make this super moist and salt and pepper and also chicken bouillon sprinkled or tonys seasoning. Then put lots of cheddar cheese sprinkled on top and bake until heated well

This is similar to what I make. I use fresh chicken, not canned. This is a good recipie to stretch leftover chicken. I top with real cheese, then seasoned bread crumbs and put under broiler for a sec once it all hot and bubbly.
