I am looking for an easy Pumpkin Thanksgiving dessert. That I can hopefully make the night before. Any ideas would be great. Thank you in advance.

If you go to the Phila Cream Cheese website, look for a layered pumpkin cheesecake. It is sooooo good! And pretty easy.

Google Paula Deen's Gooey Pumpkin Butter Cake. It is AMAZING! It's Paula Deen's, so horrible for you, but seriously....best dessert EVER! I recommend cutting the sugar by at least 1/3, though. It's far too sweet with the full amount.

This is a pumpkin cake.
4 eggs
16 oz. can pumpkin
2 tsp. pumpkin spice
1 tsp. salt
1 1/2 c. sugar
1 can Milnot

Mix together and pour into a 9 x 13 ungreased cake pan

Sprinkle 1 box yellow cake mix on top and pour 2 sticks melted butter over top. Sprinkle with nuts. Bake at 350 degrees for 1 hour and 15 minutes or until knife inserted is clean. Very moist cake.

This is sooooo easy. Buy a can of pumpkin (not pumpkin pie filling). Follow directions on back of the can but instead of evaporated milk use sweetened condensed milk and reduce or eliminate the sugar. Pumpkin pie is just a custard and baked custards are the easiest pie around!

I make it the night before. I hate pumpkin and I eat this pie. It's takes a little time, but it's not hard at all. My husband raves. When I made it last year I had more filling than fit in a 9" pie crust, but we just ate the filling.

3 packages (15 tarts each) prebaked frozen mini pastry shells
1 (15-ounce) can pumpkin
2 cups (plus some extra for garnish) frozen whipped topping, thawed
1 teaspoon (plus extra for garnish) pumpkin pie spice
1 (3.4 ounce) package cheesecake flavor instant pudding & pie filling
mint leaves for garnish (optional)

Step1
Remove the shells from the freezer and let them thaw are room temp for 15 minutes
Step2
Meanwhile, combine the pumpkin, whipped topping, and pumpkin pie spice in a medium bowl whisking until smooth. Add the pudding mix and whisk again until smooth and thick.
Step3
Spoon about 1 tbls spoon of the filling into each of the shells (or pipe the filling with a pastry bag or ziploc), then top the tarts with whipped topping, a sprinkling of pumpkin pie spice and a mint leaf.

I wouldn't put the filling in the cups until you are ready to serve b/c they will get a little soft/soggy. You could maybe prepare the filling the night before then re-whisk when ready and fill the filo cups. They are super yummy!

Pumpkin pie in a pre-made shell is pretty doggone easy. (I know, I know, you purists would never consider using a frozen or pre-made shell.)

This isn't a pumpkin recipe, it's a pecan pie-ish recipe, but it's incredibly easy and incredibly delicious:

My daughter learned to make this dessert in 3rd grade and everyone loves it.
mix a small can of pumpkin pie filling (NOT the plain pumpkin) with 2 cups of Cool Whip. Put that mixture into a prepared graham cracker crust and you're done.
