To Freeze or Not to Freeze

My baby is just starting fruits and vegetables, and I want to make my own baby food to save money and to use up what I have in my garden. I plan on freezing baby food in ice trays, but I'm concerned that some foods might not freeze well. For those of you who have experience, what kinds of foods do you freeze for baby? I'm perticularly concerned about zucchini since I have tons of it, and would like to use as much as possible. Also bananas and avacados. Any other recommendations or advice would be appreciated!

Brilliant! I am so glad you are doing this for your little one. I know some veggies require blanching before they are frozen but I am not sure of all them. There is this book called Super Baby Food by Ruth Yaron (ISBN# 0-###-###-####-1-3) that will give you all these answers and more. My kids first foods were avocado and banana and they were easily frozen in ice cube trays. Don't be freaked out by their brown coloring after sitting overnight in the fridge, it does not necessarily mean they have gone bad. A little bit of lemon juice will keep the banana and avocado from discoloring. Or you can just ignore it, your baby will probably eat it just fine. Tends to be an aesthetic thing with adults and older children.

I made and froze my own baby food in ice cube trays and then removed from the trays and put in ziploc freezer bags. I did avacadoes and usually had to add some water to get a good consistancy, but they froze well. I did bananas too, but you can freeze them in the peel, when defrosted they're pretty mushy, perfect for baby food. I've never done zucchini, though. Hope that helps. My favorite book was Super Baby Food, can probably get it at the library, has lots of tips on preparing and freezing baby food.

What about canning it? I know sounds old fashioned but people have been doing it for generations...

I make all of my own baby food for my kids. I found buying a food mill very helpful, much better than a food processor. I froze bananas and avacados, they froze great. I just microwaved them when I wanted to use them, and then you avoid the browning issue. I also did zuchinni, but when my girls got much older and mixed it with things, I could not get it a smooth enough consistancy for them when they were young. I made my own applesauce, cook and puree. We also did every other veggie and fruit you could think of, I mixed blueberries with bananas for better consistancy, and always had plenty of cereals on hand for making things thicker after thawing. Make sure to have a small sieve/strainer on hand, for things like peas, carrots, and beans, all of which I cooked first. Best of luck, let me know if you have any questions.
