I am making dinner for a family this week who eats vegan. They do eat cheese and eggs however. Does anyone have any good recipe ideas?

What can I do next?

They're not vegan if they eat cheese and eggs. You could look up (online) recipes for falafel pitas, tofu stir fry, vegie meatloaf (made of lentils), meatless chili with corn bread, meatless quiche, etc. You could even do a search for "vegetarian recipes". There are bazillions of recipes online.

I don't use recipes but my sister used to be a veggie head. You can probably find a recipe online for all of these things. I always made her veggie lasagna, potatoe soup and salad, and quiche. I also used to do a taco bar so people who ate meat could eat meat and others could have beans. I would do refired beans, black beans, rice, fresh salsa, ground beef hard and soft tacos etc. I would also do a meatless queso wich there is a recipe on Rotel (it is spicy canned tomatoe) you just mix it with velveeta. I would put that in a crock pot. I came home one night and my sister was frying a steak in a skillet. That was 10 years ago she has never gone back since that juicy T-Bone.

Check out the following web sites for free recipes:
http://vegweb.com/
http://www.veganchef.com/
http://www.fatfreevegan.com/
http://www.chooseveg.com/vegan-recipes.asp
http://www.vegan-food.net/

There are plenty more out there. I always use Google to search for stuff like this. :-)
Another tip - make anything from any cookbook, but substitute the chicken or steak with soy-based alternative chicken or steak. Most grocery store frozen food sections have these, as well as veggy burgers, burger crumbles, etc.

no eggs, cheese, butter, or any other animal product.

veggie stir-fry is your best bet. be careful of your seasonings because lots of store bought packets and bottles have fish oil in them. for dessert, a friut salad would be great.

Veggie lasagna is always a great hit at my house. You can even find soy cheese that works pretty well - although I would go ahead and use the real ricotta if they eat cheese. Just use veggies instead of meat in the sauce. You can use frozen (chopped) spinach and grated carrots, they seem to taste the best with the tomato sauce. You may like it so well you will fix it for your own family!

as a lacto-ovo vegetarian, I have the same problems when going to dinner parties...but just a few ideas are cutting off the top of a bell pepper and stuffing it with the veggie meat crumbles and cooking in the oven. I do lots of pasta, the frozen stuffed cheese shells topped w/ red sauce & cheese are wonderful as well as just spaghetti and red sauce...usually I make the sauce for spaghetti and divide it before I add the meatballs.

Enchilidas are another great idea and simple to make-You can get the recipe off an enchilida can-but just broil chicken on the stove or buy rotissere (sp?) add cheese & sauce, roll up, pour additional sauce on top and add w/ cheese and cook uncovered for 20 minutes. Then I just make additional enchilidas w/o the chicken. This works great for a dinner because you can serve various chip & salsa recipes as an app.

Also, if you point out what is safe for your vegetarian to eat, it will probably make for a more comfortable evening! Good luck

these are delicious!

ASIAN LETTUCE WRAPS

INGREDIENTS:

4 cups water
2 cups uncooked white rice or you can use the clear rice noodles.
1 Tablespoon of Vegetable or Canola Oil
1 pound DICED CHICKEN OR MEATLESS STRIPS FOR SAUTEEING (AVAILABLE AT WHOLE FOODS)
1 bunch green onions, thinly sliced
1/2 teaspoon minced garlic

1 (14 ounce) package firm tofu, drained and cubed (I like to precook my tofu but you don’t have to)
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon THAI hot chile paste
1 head iceberg lettuce leaves, separated
Chopped Celery to put into the wraps (optional)

DIRECTIONS:
1 . In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer.
Simmer for 20 minutes, until water is absorbed. Set aside and keep warm.

2. Heat oil in a wok over medium-high heat. Cook the chicken, green onions, and garlic for 5 to 7 minutes, or until lightly brown. Add the tofu, carrot, Hoisin, and soy
sauce, stirring frequently until heated through. Remove from heat and stir in the
sesame oil and chile paste.
3. To serve: spoon a small amount of rice/or rice noodles into each lettuce leaf, top with the stir-fry mixture, and drizzle with additional soy sauce or hoisin, if desired. Wrap the lettuce leaf to enclose the filling.

Optional additional stir fry ingredients:

These may be used in place of or in addition to the tofu: chopped peanuts, peppers, shrimp, rice noodles, diced chicken, scrambled egg or bean sprouts.
Note:
Hoisin sauce, also called Peking sauce, is a thick, reddish-brown sauce that is sweet and spicy, and widely used in Chinese cooking. It's a mixture of soybeans, garlic, chile peppers and various spices. It can be found in Asian markets and many large supermarkets. Look in the Asian or ethnic section.

They are vegetarian, not vegan. Many ethnic foods are or can easily be made vegetarian. Mexican food works particularly well, is easy to make, and generally everyone likes it.

Check the library for cookbooks. I have a friend who cannot eat meat or eggs and I found some great cookbooks to use when she comes to visit. Since they eat cheese and eggs you are just looking for vegetarian cookbooks. Vegan actually means no milk products or eggs. You can also search the web by putting in Vegetarian Recipes. Soy crumbles turn out a lot like ground beef especially if you put something on them like taco seasoning for tacos. I had some on Sunday in a taco salad and I couldn't tell the difference even when the lady who made it told me.

Vegans dont eat dairy or eggs, sounds like they are lacto - ovo vegetarians, same as me. There are so many yummy possibilities with the internet at your finger tips. Just do a google search of vegetarian recipes. Many have star ratings from people who have tried the recipes. I know www.allrecipes.com has a star rating system. I have never made something with 5 stars that failed! The fact that they eat dairy will help tremendously. If nothing else, you can always make pasta and salad.

When we came home from the hospital after our 2nd was born, someone made us veggie tacos that were great.

It was a mix of:
rice
tomatoes
black beans
corn
taco seasoning

After warming it up you spoon into soft taco shells and serve with cheese, lettuce, salsa, and sour cream.

Here is a version of it:
http://vegesphere.blogspot.com/2008/02/black-bean-tacos-w...

This filling is also great as a filler for quesadillas.

Enjoy!

It sounds if they are vegetarians not exactly vegans -- vegans do not eat anything that came from any living thing including honey.
Not to sound offish - just wouldn't want you to actually cook for a vegan and offend them.
for good recipe selection check out try.comVeg and vegweb.com
hope you find something you enjoy as well as those you are preparing it for.
