Meatless lasagna is one of our favs. Homemade red sauce, lasagna noodles, and a container of ricotta mixed with an egg, garlic powder, parsley. I also add a white sauce to make it creamy. Layer red sauce, noodles, ricotta, white sauce, Parmesan and mozzarella cheese, noodles red sauce ricotta, etc. until the pan is full. Top with more sauces and cheese, cover and bake at 350 until bubbly. Yummy.
Stir fry - walmart's value brand has some great frozen stir fry veggies that I throw in the wok with a little sesame oil, then toss in cooked rice (white or brown) with a seasoning packet and some fresh cilantro.
Hmmm, what else,
baked macaroni and cheese, with a salad and fruit.
Corn bread, vegetarian baked beans or chili, with veggie and fruit
Basically, almost any type of stir fry, chili, or Italian dish can be made without meat - substitute veggies for the meat, keep the seasoning the same.
