What do you want to do with your iPad?
I like: MyFitnessPal - it's basically a diet diary that you can scan barcodes on foods that you eat or just search for the item with keywords and it tracks all your nutritional info. I am on a restricted diet from my doctor and it's great for that, but it would also be great for someone who wants to lose weight.

Then I have a bunch of free toddler educational apps that I use to keep my kids busy when waiting for food in restaurants.
