What Do You Do with Your Taco Meat?

We have tacos a lot but normal ones and walking ones are getting boring...other ideas... with recipes.

What about home made taco mix.. finding ones at store are too hot for my 4 year old, sometimes also 7 months expecting mama too.

What can I do next?

I make a taco casserole.

Make a recipe (or box) of cornbread, spread it in the bottom of a greased 9X13 pan, top with (mix it all together first) a lb of seasoned meat, one jar salsa, and one can beans (black or kidney), bake until bread is puffed and golden.

Easy and delicious!

I use leftover taco meat in enchiladas, quesadillas and taco salad.
You can also make a taco/tortilla soup (just google it) it's pretty easy!

How about taco salad. Get some tortilla chips, top with taco meat, picante sauce, and sour cream. Its yummy!

I don't know about home made though.

Here's the recipe I've used for homemade taco seasoning ... You can adjust the heat and sodium levels to your liking. Just store in an air tight container and use as needed.

for my taco mix, I use spanish gardens taco spice. They sell it in a glass jar. I like it because there is not so much sodium in it. I shake that into my cooked meat, and then add some V8 juice and picante sauce, and maybe a little water, and stir it up. I make mine really wet but not watery. And sometimes I throw in a can of drained corn to make it really yummy. People who come over to eat tacos always say that my taco meat is the best they've had. As far as leftovers, lots of times I make my husband a taco omelet. Those are his favorite. I just saute some onions and jalapenos, and then throw in the taco meat and let it simmer. Then I make my egg omelet and put some in the middle and some on top then add shredded cheese. Or I turn the leftover meat into chili mac. Just add some cooked macaroni, green chilis, kidney beans, corn, and shredded cheese. The kids love that.

I do a taco bake that everyone loves all my sons friends finish the pan whenever I make it. So easy to make too.

Taco Bake -
1 1/2 lbs ground beef cook and drain
I use Ortega Taco Seasoning 1 pouch
2 Cans Texas Style Biscuits
2 - 8oz Shredded Mexican Cheese
Cookies Taco Sauce (Sweeter taco sauce not spicy)
Doritos - Can use any dorito flavor we've tried a lot of different ones

Line 9x13 baking dish w/ biscuits, cook meat, add taco seasoning as package says and a few squirts of taco sauce, once mixed spread evenly over biscuits, then I squirt taco sauceover it back and forth zig zagging it, top w/ cheese and then crush doritos over the top and then bake at 350 until golden brown on edges and biscuits rise about 20 - 30 mins, I stick a knife and you can tell they're puffy and done. Add any condiments salsa, sour cream asone likes individually.

Like Jane K says...you can add corn tortilla (torn) strips in your omelet while it is cooking and it will add the corn flavor to your egg. Yummy.

We put left over taco meat on our homemade pizzas. I also use it to make taco salad--just add it to greens with some cheese, tomato, kidney or black beans, and crunched up tortilla chips or fritos. Use salsa or thousand island for dressing.

I use the low sodium mild seasoning packets that you can buy in the store, but I don't use the whole packet. Sometimes I only use 1/4 of it and then it isn't so spicy.

I sauté red bell pepper and purple onion in a little olive oil
Then add ground turkey
Cool through
Add water or chicken stock
Cumin, chile powder, garlic powder and lots of fresh cilantro. U can substitute dried coriander for the cilantro
I also add a little gravy flower to make the sauce thicker.
Build tacos with meat, grated cheddar cheese and lettuce that has been tossed with Italian seasoning
My son loves my tacos and will not eat them any other way. Since he is 16 now I have made these about a gazillion times. His and my friends like them also

We do nachos...same ingredients, different presentation.

Old El Paso sells seasoning in a shaker jar so you can use to your preference, if that helps.

You can make your own by blending dried peppers, a bit of tomato, onions, and garlic in a blender with water or chicken stock...once you add it to the meat, you have to cook it down so you don't have taco soup.

I like shredded chicken tacos. I put a pound (or more) of boneless, skinnless, chicken breasts into the crockpot amd cover them with a jar of my favorite taco sauce. You can also add in some taco seasoning... sometimes I do and sometimes I don't. It just depends what I have onhand.

Let them cook on low about 6 hours. Take them out of the pot and shred them.

Put the shredded chicken on tortilla, hard shells, nachos, or on a salad with all your regular taco fixings!

SO GOOD and EASY!

Instead of a taco MIX, use a mile salsa, I like Herdez, it tastes homemade and is really mild.

I used to use the Schilling Taco mix UNTIL I had kids.
They think it's to spicy but hubby likes it so instead of using the 1/4 cup it
states per 1 lb of grd beef, I only use 1/2 of that. I, also, take out some
of the cooked grd beef for my son BEFORE I add the taco seasoning.

Another thing to do is not use it all atll & add mild salsa right after you take it off the heat.

Or you can add grated onions to the ground beef.

Personally, I would just cook the ground beef then add mild salsa to your
tacos.

You can, also, try adding Taco Bell Mild sauce to your taco meat.

Try using shredded rotisserie chicken for your tacos.

We make sloppy joes and will turn left overs into spagetti with meat sauce the next night. You could probably do the same with taco meat.

Try fajitas. They're more mild and are really tasty. You can use chicken strips instead, and add variously colored bell peppers and onions or even just make them vegetarian.

Now I'm in the mood for veggie fajitas with rice and beans.

I don't use taco mix, ever. Its one of the few things that is as yucky to me as a grownup as it was as a kid. Even though I like all the ingredients, its the proportions that gave me out. Waaaaay too much chili powder & cumin.

I usually don't do ground meat ... But when I do, there are a couple different options ill head toward
- chipotle sauce
- mole
- smoked paprika/garlic/onion/cumin/Seasalt/pepper
- (chicken or turkey) salsa verde
- (chicken or turkey) salt/garlic/pepper/lime/cumin

Otherwise I tend toward Carne Asada
- Skirtsteak marinated in Santa Maria (galic/salt/pepper) seasoning, couole cups of limd juice, cilantro, purple onion.
- Broiled or grilled to med rare
- sliced thin & served with tortillas

Or

Grilled Chivjdn Soft Taci /
Grilled Chicken Fajitas (grilled onions & green peppers

Or

Fish tacos
- Coconut crusted
- beer batter
- tempura
- broiled

Shrimp or scallop Tacos
(Usually with just olive oil, parsley, salt, pepper, garlic)
- BBQ
- Seared
- Cajun blackened
- Tempura
- Coconut
