What to Bring...

I am going camping with my aunt and uncle. They are going a couple of days ealier with some other people, and invited me and my family of 5 to join them. I offered them money to help with food. Uncle said just bring snacks and lunch for my family, and he will make food. Just bring something to add to it.
I am thinking on the lines of drinks or deserts. Anyone have any great side dishes to add to dinners while camping. Help I really want to contribute my part, but not sure..

We are going camping for 2 nights. There will be a total of about 20 people....10 kiddos from 3 to 16.

mega supplies for s'mores! Hot fudge ice cream topping works great as a substitute for the Hershey's bars.

containers of prepped fruit: grapes, melon, strawberries, etc.....are so refreshing when outside!

bags of prepped vegies: carrots, celery, green peppers, cherry tomatoes, etc. A bottle of Ranch salad dressing for dip & you're set!

All of the above items are what we haul to the river & lake. It all travels well in coolers & really hits the spot! Been using these food items for years!

I like the chili idea and would also bring drinks (juice and soda) for the kids, make some rice crispie treats for everyone and maybe a few bottles of wine for the grown ups (that is if this is a group that would like some wine). Your uncle said just lunch and snacks so he probably has it covered otherwise....AND who doesn't love rice crispie treats?

Grab some dogs and buns and a watermelon or two. Bring whatever you all like to drink and if you show up with an extra bag or two of ice I'm sure someone will appreciate that as well. Ice is like gold when you are camping.

I always make chili the day before we are going, cool it, throw it in a zip lock freezer bag and freeze it. It thaws by the time you are ready to heat it up and we just warm over the fire in a big pot... Mmmmmm.

real camping is tough cause you don't want to have too much stuff that needs refridgerated if you're living out of a cooler for a couple days so like mac/potato salad is usually out...what about a few cans of sliced potatoes and an onion, maybe some zucchini? I make this all the time with just a can of potatoes, slice up some onion and a small zucchini and stick it all in some foil on the grill with some butter, salt & pepper...yummo and so easy! Leftovers are very easy to reheat too! I like the prepared veggies & watermelon ideas too!

Single serve items travel best - Hostess, pudding cups, chips, trail mix, smores, etc.

Lots of fresh fruits and veggies, dipping sauce(ranch/blue cheese/things which can be left out without refrigeration). Sweet corn on the cob still in the husk. Bagged or pre-packaged snacks like chips, doritos, fritos or anything your family likes. Granola bars, trail mix, and the like. Extra water/drinks and lots of ice. Hot dogs are a great camping meal. Both hot dogs and and corn can be cooked right on the fire. Burgers if there is a grill. Buns for the dogs and burgers. Oh and condiments, and salt, pepper, butter. Have a great time!

Not sure what kind of meals he's planning so hard to suggest a side dish. But maybe corn on the cob, or one thing we like to make camping is this: fill a pan with string beans, mushrooms, onions and red peppers, some butter and seasonings and cook over the fire covered. Or you could make a salad. I agree on the ice, always need it. If you really want to help you could bring up extra wood, we always run out at the end of the trip. Have fun!!

When I was younger my friend mom would use canned pie crust, buttered bread and those sticks that you can "grill" sandwiches over an open flame to make everyone individual "pies". They were super simple and we just used a can opener to get them open so there was no fridge needed (well just for the butter but that doesn't take a lot of space).
