The one draw back of being in a long term relationship is the gift giving part of it. Go figure. My husband and I have been together for almost 14 years now and it has gotten to the point where I just don't want to give him another thing that we will have to find a spot to store it so I have taken to giving him experiences instead. Last year it was Dodger tickets for the whole family. This year I am looking at possibly buying (hopefully inexpensive) concert tickets for one of our favorite bands. Other experiences that we have had are:
* A day at the mini grand prix and batting cages.
* A really nice father's day breakfast at a restaurant that we wouldn't normally go to.
* An airplane ticket for him to go visit a friend that he hasn't seen in ages for a guy's weekend away.
If I do buy things for him, I usually will buy him stuff that I know that he will use but probably won't buy for himself. Usually this involves an upgrade of something that he already has like a stainless steel bbq tool set or better quality camping equipment.

I agree with Laurie - experiences (and stuff you don't have to store in your house somewhere) are great. We try to buy things we need to replace the old ....like a new vacuum, new TV, new dishwasher, etc, using the holiday as an excuse to make the purchase. Also I get him stuff to KEEP AT WORK. One year a digital photo frame, one year a binary clock, a lot of ThinkGeek.com stuff (he's a techie). What's ur DH's passion and play to that..... or just get him some really sexy lingerie for you that you like too. Or plan a weekend away for just the two of you....

Make his fave dinner.
Take him to his fave place to dine (or pick up take out).
A gift card to his fave place to shop (golf course if he golfs, amazon if he shops on line).
His fave drink (weather it be Arizona Ice Tea or an alcoholic beverage).
A pic of you and the kids in front of his childhood home or elementary school (only ideal if you live nearby).
Lottery tickets or scratch off tickets.
Give him a 15 min neck massage.
My dad is so hard to shop for. When asked what he wants, he always would reply "World Peace" "For my kids to go to church with me." "Mickey Mouse for president." and so forth.
So one year, when I was headed to his house for a bday or father's day weekend, I grabbed a scrap piece of wood I had and a sharpie. I wrote "DAD'S WISH STICK" and wrote some of his wishes on it "World Peace" etc. He STILL talks about that darn stick. He has it on display along with other decor in his house. I gave him room to add more.
Maybe not the idea you were looking for, but a unique idea to say the least.
On Amazon - search "Fred & Friends" and there are some funny gag-type gifts. Funny stuff that not every man has, but they may like.
Golf outing, day at the man spa/massage, if he is a gardener - new pair of pruners, if he is a cook - new knives or a cleaver, digital picture frame of family pictures, album of photos from his childhood (probably need the in-laws for that).
I took my kids to a pottery place this weekend. We made dad a "Dad's BBQ Plate" platter. It isn't that pretty, but it is one of a kind!
The kids were jumping up and down once they knew that I was taking them to decorate some pottery for Father's Day.
We had them each write their names on the back and I "signed" it, Father's Day 2011.
Now he has a platter to use all summer after he's grilled us up some hotdogs or hamburgers.
What about a season pass for a place he likes to go with his kids? I'm getting my husband a pass for a local water park that me & my son already have season passes for...so he can join us a few days this summer--he can meet us there after work!
I'm a fan of personalized gifts - I scanned my dad's old photos and compiled them in a photobook, also have some more thoughtful ideas here that won't break the bank.

Gift Card to the local car wash.
When my husband and I were younger we went to an all day concert. Last year I had our daughter put all of the music (that I could find) on my husbands ipod. He was really surprised.. he says he loves hearing that music, it brings it all back to him.
We also always make a special meal just for him and usually take him to the movies that day.
Make up some certificates for him. Like certifcate good for one hug,breakfast in bed,a massage. Another thing,what kind of sports does he like? get him some tickets to a baseball game if he likes baseball. If he likes fishing,get a new fishing pole. Sounds like it is time to be creative and think outside the box. Good luck

make him a card or album using baby pictures of his children, it's always nice to look back. my father in law not only has everything, but is a minimalist. one year i made a card using his baptism photo on the irish colors (where he descends from) and he just loved it. he told me he doesn't like to keep things because hates clutter, but that the card was one thing he would proudly keep. On his 80th birthday, i used a picture album with 4 openings; the same baptism photo of him, my husband's baby photo (about same age as his dad), and photos of my two kids also about the same age as grand-dad and papa. It is displayed nicely in his family room. Hope you come up with something unique and worth adding to the man who had everything. :)
