This year we are going to stay in for our anniversary - put the kids to bed, watch a movie, have a couple drinks.
I want to make my hubby a special dinner but I just can't think of what....

We live in a small town so I can get my hands on things like steak but we don't have any sea food (unless its frozen shrimp)

So ladies, what would you make?..

Thanks for the responses. Laurie A - I ordered lobsters from the site you gave! I would of never thought to do that so thanks!
No we are not newlyweds, I've been cooking dinners for the last 8 years so I figured I'd ask what you would make your hubby to get some new ideas :)

Cornish Game Hens

They are easy to roast, stuff and find things to have on the side.

Stuffing can be dressed up easily with fruits and nuts (suggest apples and walnuts), you can use a red potato, bake half way thru, then slice, drizzle with EVOO and finish baking. Green Beans garnished with bacon pieces, salads are good too.

Basically you can do a "Thanksgiving dinner" for two and more dressed up.

Maybe you could do a special dessert instead? My husband and I eat when the kiddo eats, by the time she goes to bed it's way too late for him to have not eaten dinner already.

But a nice dessert to go with your wine and movie might be nice. Perhaps you could do something fun like chocolate fondue and fruit.

Or maybe make a fondue related dinner, if you're wanting a dinner? That can be fun and romantic.

I make a prime rib once a year for our anniversary. We rarely eat red meat, so this is a real treat. It's expensive but super easy and so so good provided you carefully time the cooking. Parboil some small potatoes and throw them in to roast with the meat. Add a salad, wine, and you're done. Just be sure to do some research as there is lots of advice out there on how to cook it so that you don't end up ruining it by leaving it in too long. Also get a good meat thermometer. You'll have leftovers but they're good with salad or in sandwiches later in the week.

Sounds like you already got your answer, but I made Garlicky Pork and Greens (kale) from Williams-Sonoma's website. It was really easy, and has variations on the cooking method (cast iron and crockpot - I did it in the pressure cooker in 35 minutesm then added the greens immediately when it was done and they cooked perfectly). It's an easy, inexpensive meal that smells unbelievable and was SO good! (I'm not a big "greens" fan and this is awesome.) The recipe said to serve it with a white bean salad, but I served ours with rice, couscous, etc., instead.

I see you ordered lobsters (how neat). I'd get some steaks to have on
hand just in case they don't arrive on time or don't turn out right. Or just
to have steak AND lobster! Yum.

I always do a couple of small but yummy appetizers. Feels decadent & like being at a restaurant. Garlic Rondele spread on crostini or soft French bread, mini quiches etc. You can even do a good salsa w/chips.
Don't forget popcorn for your movie. It's just fun.

Well, I would just make my husband's favorite meal.
And give him his favorite treat, after (wink, wink!)
Are you newlyweds, do you not know what he likes? Just ASK. Men are fairly simple creatures, it doesn't take a whole lot to make them happy.

Not very romantic, but I would probably make us two separate entrees and the same side dishes. He loves filet mignon and I don't like steak so I would make him the steak and probably something else for me. You can't even get some fish, like salmon? Fish would be on my wish list. Cheese fondue is romantic and can be pretty simple. I would have a simple salad and maybe some crusty French bread with olive oil for dipping, if not already dipping it in cheese fondue. I would keep it simple so you're not spending most of your time cooking and cleaning up.

Thinking back from when you first dated, was there any special dinners you made together? I remember when my hubby and I first dated, one of our first dates was in my apartment. He came over, we went to the store together and bought stuff to make a meal. It is a great night and an awesome memory. So, if I was going to make something special today, I might try to recreate that night.

Most men I know are pretty happy as long as there is adequate protein and a favorite beverage. For my husband? That could mean a steak and side salad, with a beer. That's all he'd need to be perfectly content.

Really. Everyday meals that he likes. For us, if I want to "WOW" him, I bake something for after the meal. The meal is sustenance, which for him, means adequate protein in a form he likes, plus some vegetables. You could even slice up a nice steak and lay it over the top of a nice big salad! That would make my husband very happy.

Pop an Ice cold brew... and I don't know.. a key lime or lemon merengue pie for dessert? Or fresh apple pie a la mode?

Just serve whatever you make on a nice place setting with dimmed lights and candles, and you are set. :)

I like to do steaks on the grill, that way my husband has a part in the food preparation because he does the grilling.

If you really love Seafood - Legal Seafood in Boston will overnight you a package with live lobsters, a cooking pot, clam chowder, potatoes and I think mussels or clams. You just need to be around to get the delivery the day before. I'm not sure how much it costs because we have gotten it as a gift but it's worth checking out if you want a great seafood meal. They have 2 lobster dinners and 4 lobster dinners. Or if you don't want to cook, have one of the good restaurants cater it for you. My cousins live near Rancho Cucamonga and I know there are some nice restaurants in Upland, Claremont area. Hope this helps. Happy Anniversary.

Our go-to special occasion dinner is chicken cordon blue. It's super easy to make too. Get thin sliced chicken breasts (or pound regular breasts thin). Lay it flat, top with a slice of deli ham, then a slice of Swiss cheese and roll it up. Close with a couple of toothpicks. Dip it in melted butter, then roll it in Italian bread crumbs or Panko crumbs. Place it in a glass baking dish. Repeat for as many chicken breasts as you'd like to make. Pour the remaining melted butter over the chicken. Then pour on about a cup of white wine and cook for about 45 minutes. We serve it with angel hair pasta or rice and veggies.

I also like the idea of a special dessert.
