Usually the guy who owns Prairie Moon restaurant in Downtown Evanston dresses up as the Easter Bunny during their Easter Brunches (which are very reasonable in price and quite low-keyed). My daughter always likes to see the "easter Bunny" there during our brunches. I'd call first, though, to make sure they are doing it this year.

Fields used to have the Easter Bunny walk around the tables at the Walnut Room giving out Easter Eggs. Not sure if Macy's is continuing this tradition.
We do the Easter bunny and Santa at the HIP mall - it is a small mall at Harlem and Irving park. They are pretty good there - nice display, moderately priced, etc.. It may be just luck but we have never had to wait in a long line.
