Awesome Boneless Buffalo Wing Recipe?

Ok ladies, it's football season and we love to have a bunch of snacky foods and watch the games all Saturday. We usually make beenie weenies w/ barbq sauce, but want something different. For whatever reason, I dont like to sit there and peel the chicken off the bone, so I would love any recipes you guys have for boneless buffalo wings. (I'm thinking like the style at BWW?)

We used to go to Chili's just for the boneless buffalo wings...after many many trips, I decided I needed to find a recipe and came across this one...it's good!!!

INGREDIENTS
1 lb boneless chicken breasts or tenders, cut in bite size pieces
3 cups flour
1 1/2 tsp salt
3/4 tsp black pepper
1 1/2 cups buttermilk
Vegetable oil

DIRECTIONS
Combine flour, salt & black pepper in medium size bowl. Place buttermilk in a separate bowl. Dip chicken pieces in dry mixture, then buttermilk then dry mixture & fry in batches in fryer or deep skillet. When cooked & crispy, place on paper towels to drain then place in large bowl, cover with sauce and shake to cover - serve with carrot sticks, ranch & french fries!

BUFFALO SAUCE - we double since we like LOTS of sauce
3/4 cup Frank's Hot Sauce
1/4 cup water
1 Tbsp water
1 Tbsp butter
1/4 tsp cayenne pepper

You can make an easy sauce using softened (at room temp) butter and Crystal's hot sauce or any Tabasco type sauce. Whip the butter and hot sauce together. I like to add some paul prudhome meat seasoning as well. Your sauce should have the consistency of mayonaise. Use one tablespoon of hot sauce for every tablespoon of butter. A 1/2 stick will coat 2 or 3 pounds of wings easily. I've never tried to make boneless, but you might think about buying a bag of chicken tenders. Take them strait from the oven or fryer and toss them with the sauce in a large bowl while they are still hot. Hope that helps!

*Note: If you plan on seasoning your sauce, remember to use UNSALTED butter so you don't end up with overly salted wings.

I found an awesome recipe that I use, it is as follows:

Chili's Boneless Buffalo Wings

Ingredients:
1 lb. Skinless Chicken Breast (1/2" cut 1 1/4"x 1 1/4" squares)
3 C. Flour
1 1/2 C. Butter Milk
1 1/2 tsp. Salt
3/4 tsp. Ground Black Pepper
Vegetable Oil (peanut oil is great for frying)
Hot Sauce
3/4 C. Hot Sauce (Frank's Brand was used)
1/4 C. Water
1 Tbs. Butter
1/4 tsp. Cayenne Pepper (heaping)

Preparation:
Sauce Directions
Place sauce ingredients in small pan and simmer 4 - 5 minutes until blended well. Remove sauce from heat, set aside to cool.
Boneless Wing Preparation
Mix flour, salt, and pepper in bowl. Place buttermilk in separate bowl. Prepare chicken breast pieces 1" thick, 1 1/4" x 1 1/4 "square. Heat oil for frying, about 360 degrees. Dust chicken pieces in flour them dip them into the buttermilk and back into the flour, gently shake excess flour off pieces and carefully place pieces into hot oil and fry until golden brown. Remove chicken pieces and drain. When all chicken breast has been fried and drained place in a bowl and cover with Sauce that has been prepared. (Reserve some sauce for recoating) Place a lid on bowl and gently shake or stir until all nuggets have been coated. Place boneless buffalo wings on non stick baking sheet and bake in a preheated oven at 350 degrees for 20 minutes. Place in a bowl or platter for serving and pour rest of wing sauce over wings.

This is pretty hot and I can not have them when I am pregnant or nursing so we make a "sissy" batch of Honey BBQ wings, the steps are the same but we use Honey BBQ for the sauce, The key is the baking and recoating. We get great reviews from this recipe every time we make them and I don't eat chicken on the bone so it is perfect for me. I have many other recipe's that I found for all kinds of things like La Madeline's Tomatoe Basil soup and Bennigans Baked Potatoe soup and stuff from Olive Garden.
