mix together and bake as normal
it is so yummy and never lasts past one day.
I do tend to make them as cupcakes

In an effort to get a bit more veg into my boy, I thought to try the desserts made with fruit/ veg route. Does anyone have a reliable recipe for dessert using canned pumpkin & yellow cake mix? what about zucchini bread? Anything else of this ilk that goes down really well in your home?
if I use pumpkin, do I use eggs, oil & water? do I change the bake time? can you taste the pumpkin?

You might check out that book that Jerry Seinfeld's wife wrote. She has lots of recipes that include putting vegetables in foods that children like.
I add a half cup of pumpkin to pancake batter. I have added more but the pancakes come out very dense, which I do not like. I make a banana pumpkin bread that my kids love. They have taken it to school and their friends rave about it. It is made with yogurt and comes out very moist.
1/2 to 1 cup mashed very ripe banana (about 3 small)
15 oz can of pumpkin--or 2 cups fresh, cooked pumpkin
1/2 cup sugar
about 1/2 cup nonfat yogurt (I like to use a 6 oz container of banana or vanilla flavored) Also use greek if you like
1/4 cup margarine or butter, melted
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped pecans, toasted if you want. I usually don't. I make this also for Halloween, putting mini chocolate chips in and they are spiders.
Preheat oven to 350º
Combine first 5 ingredients in a large bowl; beat at medium speed until well blended. Combine flour and next 3 ingredients; Add flour mixture to banana mixture
Spoon batter into an pan coated with baking spray. Bake for 1 hour and 5 minutes Cool 10 minutes in pan on a wire rack; remove from pan, and cool completely on a wire rack. Bake mini loaves for 35 minutes or muffins for 18 minutes.
I have found that muffins are okay but a loaf is awesome.
You could do smoothies. Make them mostly fruity, but sneak in a handful of spinach.
ETA. One awesome dessert I LOVE is to mix a box of angel food cake with a 20 oz can of fruit (with its juice... My favorite is crushed pineapple!) I have tried it with crushed pineapple, apple pie filling, and peaches. All delicious, and it makes a lot!
Just mix the two ingredients, pour into a cake pan, and bake at 350 for 30 minutes. (The peaches did take longer... Follow the instructions on the cake box if you aren't sure how to tell if the cake is done yet.)
I make pumpkin muffins all the time this way. I use the spice or chocolate cake mix. Then add in 1 15oz can of natural pumpkin (like soup can size) or 1/2 if it's those large cans (29oz). Mix it together for a bit and it makes almost a moose consistency. Put it into 12 lightly greased muffin tins (no liners needed) and bake at 350 for 30min. It is SOOOO easy and all you need is pumpkin and cake mix. Sometimes I add small chocolate chips as well. You can use any of the cake mix flavors but we like choc and spice the most. My sister likes the carrot cake mix. Just don't use devil foods mix. Two times they burned on me when trying that kind. I use the big can of libby pumpkin and make 2 batches as they go fast. They make big muffins and they are very moist! Eat within 4-5 days.
Oh, and I try to get a healthier cake mix if that is possible. When it comes down to it, I would rather they eat these muffins then store ones that have no veggies in them.
If he likes spaghetti, add carrots or peas and if he doesn't like the veggie texture, you can buy the baby food and add it. I use to add that stuff to anything I could. And you can do the same with meatloaf.
