I am 5.5 months pregnant and I have been craving HOMEMADE chicken salad. I am a terrible cook. I can barely boil water. lol My mother lives 2+ hrs away and can't make it for me. Any recipes that I can use to make this? Also, did you teach yourself to cook? Who taught you? When I was younger, I was not allowed in the kitchen. I am oldest of 3. After my sister and I started school my mom would let my brother sit in there with her while cooking. He was always super still and quiet. I feel bad my baby brother(22yrs) can cook up a storm but my sister and I well lets just say if it can't go in the microwave you are screwed for dinner. lol

I craved chicken salad every day for like a month of my first pregnancy =D

I like to get a rotisserie chicken at the grocery store, cut the meat in pieces, add as much mayo and celery as you like. I then sprinkle some fresh lemon juice on it and mix it in. You can also throw in whatever else you like- dried cranberries or halved red grapes, for example.

He uses a healthier replacement for mayo, which I have never tried. I also prefer to cut my celery smaller and use less than he does, but those are just personal preferences- you can do things however you like. I'm confident that you can easily make chicken salad, AND that you'll feel a little more confident in the kitchen too =o)

My recipe is similar to amyj156.
I use either left over chicken or the canned. I mix in just a little mayo then add chopped walnuts or almonds with either grapes, dried cranberries or dried cherries.

Get a simple cook book like Mom's Kitchen - i think it is...

Chicken salad...the EASY way?

Buy the Chicken in the can (like Tuna)
add mayonnaise, chopped celery (this is me) and chopped onion...some people put hard boiled eggs in it too...if you don't feel comfortable doing this yourself...some grocery stores sell hard boiled eggs as well..

mix well and put in lettuce leaf, tortilla, or bread!! ENJOY!!!

Wish you were closer and I'd make ya some. :)

We will roast a chicken in the oven and use that cooked meat to make chicken salad and tacos and such. Costco's rotisserie chicken is very yummy too.

But anyhoo - my chicken salad recipe looks like this:
chicken, lime-flavored mayo, salt, pepper (we actually use Tony Cachery's, which includes garlic powder and paprikia too) , pickles, a little pickle juice (dill btw), celery diced tiny, hard boiled eggs, and sometimes we add some chopped olives too. We like it on triscuits or sourdough bread, but of course you're prego so you'll eat it however you and baby are craving it. Hope you find a recipe you like!
(BTW - I still call my mom to ask her how to cook this and cook that. She's always teaching me and I'm always asking questions.)

the easiest way to start cooking is to simply find a quick, easy recipe & hit it! It's a life skill which will carry you thru. Cooking is cathartic, soul-enriching, & easy to learn!

Here's my chicken salad recipe:

boil, bake, nuke chicken breast.....your choice on method of cooking. If you're going to boil/bake it, then add some celery & onion to the water. Simple salt & pepper, add some garlic salt/powder/real ...if you have any & the taste will be wonderful. When the chicken is cooked, then dice it.

Add equal parts of mayo or Miracle Whip (regular, lite, or fat-free...they all work)............to Cool Whip, thawed (regular, lite, fat-free....NOT vanilla or other flavors). By combining the mayo & Cool Whip, you will have a very light dressing for your chicken salad!

Add chopped celery, halved grapes, slivered almonds....& stuffed green olives. (many people don't like the olives, omit if this is the case....but my family loves the sweet/salty combo in this salad.) You can also add other fruits, including dried cranberries....but we find that the grapes are usually enough sweet flavor. & that's it!

Another variation would be to add minced fresh jalapeno to the dressing. That's also yum! & if you're feeling adventurous, you can change up the fruit/vegie/nut combos....pretty much anything works. Flavor it to your taste....the key to this salad is the dressing mix. Good Luck

We get canned white meat chicken (did you even know they made this?! I was so excited to find it! lol), drain, mix w/mayo and your choice of veggie (we used chopped carrots and sweet onions) and sea salt, pepper and dill to taste.

For "homemade", saute a chicken breast and slice it up instead of the canned. Allow to cool, then mix w/your choice of add-ins.

For a great summer recipe, you can use grapes.

It's so quick, easy and cheap! Enjoy!

For chicken salad.... no matter the recipe, I like to throw in dried cranberries too.
OR when making Turkey Salad mix, too.
Same way as making Tuna Salad. Just a different meat used.

For the Turkey Salad... throwing in a bit of crushed pineapple is also GOOD.

For either meat... use Mayo, pinch of salt, ground pepper if you want, minced onions, diced celery.
Or whatever else you like.
Drain the meat first, if using canned chicken etc.
Just use the amount of Mayo, that you like. Some like more, some like less.
Just mix it all together n a bowl.

i was never in the kitchen growing up either. for me it was frozen pizza or frozen dinners. there's stll a lot that i would love to learn to cook. i'm more of a baker. i just picked up the phone and called my mom. i also got a taste of home cookbook. LOVE IT. for chicken salad the easy way you can either get canned white chicken, mayo, and celery. put the chicken in a chopper thing (can't think of the name) and chop it. add as much mayo as you want, cut up the celery in chunks and then mix that. then you're done. i just did it last night with canned ham. or you can take boneless, skinless chicken breast, boil until done. shred it, add mayo, and celery. done. also you can add salt and pepper to taste.

I bake some boneless skinless chicken breasts (wrap in foil with thin slices of lemon on top and a dash of basil if you want, place the whole foil 'package' on a baking sheet and cook at 425 for around 25 minutes.
Take it out of the foil when it is thoroughly cooked (I use a meat thermometer to be sure it hits 165-170 degrees) and place it in ice water to cool quickly.

Then while that is cooling, dice some red delicious apple and a half of a small vidalia (sweet) onion, and thinly slice a stalk of celery. Cut a cup of red seedless grapes in eighths. Mix it all up in a bowl and let it sit.

Take the chicken breasts and a pair of decent kitchen shears, and cut the chicken in thin (1/4 inch) slices. Then take the slices and cut into strips and then into cubes... dice it basically. Salt and pepper to taste. Then add some mayo to taste and then mix in the fruit/veggie mixture. Let it sit in the fridge for a few hours for the flavors to meld.

If you use a "typical" package of chicken breast, say 1.5-1.75 pounds of chicken (about 3 breasts) then this will make enough to last you several days.

Ingredients list:
chicken breasts (and a lemon if you want for baking)
celery
onion
red delicious apple
red seedless grapes
mayo
salt/pepper

I like it on a bed of shredded lettuce, in a tortilla wrap, or with wheat or sesame crackers. YUM!!

p.s. sometimes I add chopped walnuts, but if serving a crowd I leave them out in case of nut allergies.

ok this is the easiest way to make chicken salad. Get a can of chicken at the store mix ranch and mayo with it to taste and add anything you want in it.
I can cook but found that I can't give the chicken the texture or taste I like to make it with fresh chicken! Good luck. Just as a suggestion I just made this a few weeks ago for a batchlorette party and found these great crackers to go with it, Wheat thin flat bread Italian herb. Oh perfection.

My mom did cook a lot growing up but she didn't really teach me - mostly because I just wanted the cookies, didn't care how the flour got in there! :-P

I bought the Better Homes & Garden cookbook right before my wedding. Didn't use it much at first but if you get a hold of this book...it's great. I now make all our bread and I've finally cooked beans successfully (that's how inexperienced I was!). I can "throw together" a batch of biscuits in that way that used to irritate the fire out of me when other people did it before I started really cooking for my family.

The book doesn't assume you have much knowledge at all and walks you through the steps, like kneading dough, and what utensils you might need in the kitchen. It has great single page charts on, for example, how to cook all sorts of different grains and even a drinks and grilling section.

Good luck on your chicken salad craving! If you're looking for a good cookbook, seriously, I would take a look at this one!

Poach chicken by putting raw chicken pieces in chicken broth, bring to a boil and simmer (low boil) for 10 to 15 mins. I also add some cut up veggies to the broth - celery, carrots, onions, peppers, whatever is on hand as well as parsley and maybe some basil and a bay leaf. Those thin boneless, skinless breasts usually only take 10 minutes - check them by cutting into the thickest part and making sure there is no pink. Don't over-poach, it will get rubbery. The broth and veggies you use for poaching should be discarded.

Add the cooled chicken to cut up celery and onions. I like a mild onion, like Vidalia. Add your choice of fruit - mandarin oranges (drain first), or grapes or cherries. Then make the dressing in a separate cup to taste. You can combine plain yogart with a little mayo, or fat free sour cream with a little mayo. Then add to dressing whatever flavor you would like to have - like a little mango juice. Or a little Pina colada mix. Just sample until you like it. After the dressing is mixed in, I like to add something crunchy. You can choose from wonton strips, chinese noodles, almonds, cashews.

I taught myself to cook by experimenting. I'm still experimenting. When my husband is out of town, I run amok in the kitchen trying new things. Some things work and some not so much but it's fun!

Boston market chicken, low mayo ( mustard and chipotle optional) , onion, celery diced vey tiny, hard boiled egg, red grapes, walnuts. Serve over whole wheat toast or pita bread with lettuce and tomato.

Mexican style:
Boneless Breast chicken. (1 lb)
Carrots (4-5)
Potatoes (3)
Lettuce.(1/2) cut
1 can of sweet corn
Mayo
Sour cream
Boil chicken breast with garlic and salt for 20 to 30 min. Meanwhile chop small carrots and potatoes, take the chicken out of the water and put the veggies for 5 min.( or until tender). I shredded the chicken some people make small cubes, then in a bowl put the chicken,lettuce corn and mixed the same amount of mayo and sour cream , ( start with a big spoon of each and then add more if its looks dry) add the veggies and ready!!!!get some tostadas or chips and enjoy . You can add some jalapenos or only the liquid inside the can for more taste.

My mom and my two grandmothers taught us how to cook and be smart and frugal. If you want to make chicken salad with little or no cooking I would do this: Get a chicken from the deli at the supermarket and take the meat off the bones. Cut them in bitsize chunks. Then mix 1 cup of majo with 1/2 Mango Chutney, grab some cut up celery from the salad bar at the supermarket or cut up some yourself. Mix everything together and add some curry cowder. Some like raisins ( I don't) but it you do add some and some slivered almonds. Salt and pepper to taste. Voila...chicken salad with no cooking skills. Good luck

Get a rotisserie chicken at S.'s Club or the grocery store (we eat it and I use the leftovers). Dice it, add buttermilk ranch dressing and a little milk just so it is thinner. I add rotini pasta (or whatever I have in), artichoke hearts, sundried tomatoes, olives, fresh veggies, craisins, cashews, and anything else in my cupboard that sounds good...it makes and amazing chicken pasta salad.

OK - so, I LOVE to make chicken salad. Easy way to do it, get a rotissiere chicken and pull the meat off and shred it up. Make some hard boiled eggs and once they are cooled, peel and cut them up. Put your chicken in a large bowl, then add mayo, sweet relish, hard boiled eggs. I like to add bacon and shredded cheese to mine also. I also use some seasonings called Crazy Jane's Mixed Up Salt - try to find this. Makes a great chicken salad!!!
