I have a great one! Super easy and scrum dil! They are Oreo cookie cream cheese truffles. I think the recipe is on the Kraft Foods website. You can google it. You smash up a whole package of Oreos (creamy centers and all) then add one package of softened cream cheese, roll them into balls and then dip them in melted semi sweet chocolate and sprinkle a little of the Oreo crumbs on top to make it look like a fancy truffle. Refrigerate for a couple hours.
I do a chocolate trifle. You make fudgy brownies in a regular pan and a bowl of chocolate pudding. Then you cut up the brownies and separate into 3 equal amounts. You put one layer of brownies, topped with a layer of pudding and then put a layer of Cool Whip. Then repeat - 3 layers a total of three times. Then you top it off with broken up Score candy bars. It is an amazing dessert and if you put it in a Trifle Bowl, you will impress EVERYONE.
There is a fabulous recipe for "Oh My God Chocolate Cake" in the Sharing Mountain Recipes cookbook---3 layers of rich chocolate cake, fondue frosting between layers, ganache topping and icing over the ganache.
There is also a wonderfully creamy chocolate creme pie recipe in the book which can be made with Baileys whipped creme! Look up The Muffin Lady and the this cookbook is on sale through the holidays!
This is my home-made chocolate pudding recipe:
This is for a triple batch:
18 Tbs granulated sugar
6 Tbs cornstarch
6 Tbs cocoa powder
3 pinches of salt
Combine in large pot.
Add 6 cups skim milk.
Bring to boil, whisking constantly, until thickened (about 3 minutes once you've reached boiling)
Pour into glass serving cups or dishes - refrigerate.

I've had a lot of success with a Hershey's recipe in the past. I frost it with a vanilla buttercream frosting but you could always frost it with chocolate instead.
Hershey’s Kisses Birthday Cake
Ingredients
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
VANILLA BUTTERCREAM FROSTING(recipe follows)
HERSHEY'S KISSES Brand Milk Chocolates
Directions
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
4. Frost with VANILLA BUTTERCREAM FROSTING. Remove wrappers from chocolates; garnish top and sides of cake. 10 to 12 servings.
VANILLA BUTTERCREAM FROSTING
1/3 cup butter or margarine, softened
4 cups powdered sugar
3 to 4 tablespoons milk
1-1/2 teaspoons vanilla extract
Beat butter in large bowl until creamy. Gradually add about half of the powdered sugar, beating well. Slowly beat in milk and vanilla. Gradually add remaining powdered sugar, beating until smooth. Add additional milk, if necessary, until frosting is spreading consistency. About 2-1/3 cups frosting.
