Have you visited Graasch Foods or Sendiks? They carry different brands you may be looking for. Both have locations in Brookfield
I am soon moving to the West Milwaukee area/West Berling, Brookfield...I think..and love to hear to that there are Italian Pork Store/Delicatessens nearby this area. Also looking for Italian bakery that carries semolina bread, hard crusted rolls, cannoli's etc.

There is an Italian Deli in Brookfield called Angelina's. It's on North Avenue. Not sure if they carry what you're looking for, but is worth a try. Their Italian Beef is great!
Welcome to the area!
In Waukesha, just outside of Brookfield there is a restaurant called Albaneses Roadhouse. Attached they have a delicatessan where they have a good selection of cheese, meats, and spices. Here is a link to their website: http://albanesesroadhouse.com/Deli.html
Here is their address: 2301 Bluemound Road, Waukesha, WI 53186

Sendik's foodstore (they're a small local chain) sells all of the Boar's Head Brand coldcuts, there are two in Brookfield, one on Capitol Drive and (I think) Brookfield Road, and another one on North and 124th (used to be a Kohl's foodstore-across from the YMCA). As far as I know, the best Italian bakery you'll find is in the city on Brady Street and Humboldt Avenue, its called Sciortino's-they'll have cannoli's, etc... and right across the street is Glorioso's which is a small Italian family owned grocery store/delicatessen. Good luck!
