Ginger Cookie Dough Left Overs

I made two huge batches of ginger cookie dough. We rolled one out and made about a bazillion cookies.

I still have one batch left and the kids have totally lost interest. And frankly they're not that into ginger cookies anyway. I was thinking rolling it out, cutting it into bars and topping it with: what? A cream cheese blend, sort of sandwhiched between two?

Help me out ladies (and guys)

I used some of our dough to make a crust for mini cheesecakes. I rolled balls and then flattened them in a muffin tin. Then topped with a plain cheesecake recipe. When it was all done, I topped it with caramel. It was pretty good and I am also not a fan of gingerbread.

You could always freeze it and use it later. You could also bad cookies and freeze them.

If they're not interested in ginger cookies right now, I doubt they'd be interested in ginger bars with cream cheese frosting.

I put mine in the freezer. I'll take it out for valentine's day so we can make heart shaped cookies.

Ice cream social: chop it into little bits and mix it up with vanilla ice cream and a little hot chocolate syrup. Mm.

Or maybe make your sandwiches with this as the filling: gingerbread cheesecake dip

pumpkin cream cheese frosting. don't know the the recipe but I had it on ginger bread one day and it was out of this world!

You can form the dough into a roll and cut cookies from the roll. This is easier than rolling them out. Then you could bake and give cookies to friends, neighbors, co-workers.
