Everyone makes their potato salad differently it seems so what do you put in yours? What makes yours famous?

I am curious to see what you all say :)

Thanks everyone! You all have some interesting ways of making potato salad! Lots of recipes!

I make mine with potatoes, mayo, mustard, pickles, onions, celery, radishes, and salt and pepper to taste :)

I use red potatoes and leave the peel on, about 12 of them.
a dozen hard-boiled eggs
chopped red onion
chopped dill pickles
mayo
dry mustard
horseradish sauce
seasoning salt and pepper

Normal old potatoes. Boiled. Chunked up and some mashed maybe.

Mayo or Miracle Whip. Some mustard and chopped onions. Pickles, maybe pickle relish instead. That kind of stuff.

Potato Salad with Smoked Salmon and Eggs

4 lbs Yukon Gold potatoes
6-8 eggs
5 tbs Whitewine vinegar
1 tsp bouillon granules or 1 bouillon cube
1 big onion
salt and pepper
10 ounces whole fat yogurt
5 ounces Crème fraîche
3-4 tbs Horseradish prepared
1-2 tbs Capers rinsed
12 ounces smoked salmon cut into thin slices
Chives chopped

1. Wash potatoes and boil for about 20 min untill done. Hard boil the eggs.Rinse both under cold water, peel and let cool.

2. Slice potatoes. To one cup of water add the vinegar and the boilion granuals and bring to a quick boil. Peel and chop the onion and add to the water/vinegar and let simmer for 1-2 minutes.
Add salt and pepper to taste and then pour over the potatoes and let sit for about 15 min.
3. Combine yogurt, cream fresh and horse radish, season with salt to taste. Add capers and dressing to the potatoes and let sit for a minimum of 2 hours.
4. Cut eggs and smoked salmon into small pieces. Chop chives. Add that to the potatoes.
Serve with a crusty bread and a nice glass of wine.

EDIT: I just translated that on the fly and there may be a mistake here and there. Please excuse that. My mom made that salat last time she was here and OMG my hubby was a happy happy man lol.

I hate...HATE...potato salad. BUT, if I have to make it for something...this is how I do it:
Red potatoes
Greek yogurt
scallion
herbs (whatever I have on hand)
A little bit of Dijon mustard
salt & pepper

I don't do measurements or take time to add anything else. I won't even taste it! Other people eat it, so I assume it's OK.

Salt and Pepper and chilled for a few hours after making it. HAVE to eat my nice and cold.

Potatoes (I like the Yukon golds) boiled but not mushy-- and I usually leave the skins on
Hard boiled eggs
Diced sweet pickles (or relish)
Diced dill pickles (or relish)
a little bit of mustard
Miracle Whip (NOT mayo!!!)
bacon or real bacon bits!

I never measure, just guess and dump....

ETA: I can't believe I forgot the onions....

red potatoes (keep the skins on)
hard boiled eggs
diced pickles
diced celery
dillweed
mayo with lime
vinagrette: oil vinegar, salt, pepper, finely chopped onion, spicy mustard

Boil potatoes, put in vinagrette and slightly mash. Grate eggs with cheese grater and add to mix. Add everything else. Taste, add more of something you want. Chill.

I think mine (my mom's really) is famous b/c it's slightly mashed, so it's like mashed potato salad. The vinegratte makes it unique I guess. I like to use red wine vinegar for my 'vinegar' in the vineagrette.

heirloom family recipe, serve well-chilled:

red potatoes - boiled, then skinned & sliced paper thin
onions, celery, green pepper....lots of all
bacon & the grease
Miracle Whip, sugar, S&P.

We now call this a "Heart Attack in a Bowl"! The recipe has been used by my family for 60+ years now.....& it's still requested. My older son made a 10lb batch for a party a couple of weeks ago, & it was the 1st time our younger son actually thought about it/tried it/liked it. Now he's addicted to it! As a family, we only make it about 3-4 times/year....since it's soooo bad for us!

This is what goes into the potato salad my mom used to make. It is really yummy....even my 3 and 6 year old will eat it :)

boiled potatoes
boiled egg
onion
cucumbers
hellmans mayo
salt and pepper

mmmm....thinking about potato salad is making me hungry. :)

I make a german-ish potato salad.

(My poor long suffering mother makes the yellow mustard & pickle kind, and hers IS prizewinning... but I just can't stand it. Sorry Mum!!! Although, it's so iconic, in a million years when she's gone, I'll undoubtedly make it just to remember. I say this, because the only time I've ever eaten it and liked it was when I was military and was missing her.)

- Red or Yukon Potatoes in large chunks
- Bacon
- Onion
- Green Onion
- Pinch of random herbs depending on what I feel like (parsley, thyme, lavendar, rosemary, etc.)
- Stoneground Brown Mustard
- Mayonaise
- Hardboiled Eggs
- Served Warm ideally, but cold works as well

I'll occasionally toss in some white wine vinegar and paprika if I'm feeling more devilled egg potato salad that time, or some lemon for a lighter feel over the summer.

For a kick (or a change up on day 2/3/4) I'll add some sriachi, or Franks Buffalo sauce, or roasted jalapenos.

I'll also, rarely, throw in some greens (brocolli raab, kale, whatever).

If I'm serving buffalo wings (don't need a double hit of Franks!), some smokey bleu cheese is another great add.

But the BASE, is what's listed above on the list. Then I just tweak it depending on my mood and what's being served.

I make the traditional- mayo, mustard, eggs, and relish.
I also make what I call a cajun stlye potato salad
Mayo, Creole mustard, ketchup, dill relish, lea and perins worchester sauce. It is very good and gives a tang.

Red potatoes cut into bite-sized pieces, roasted in the oven with herbs and seasonings; dressing made of mayo, dijon, garlic, oil, and other various seasonings all thrown together best eaten while still warm though not necessarily hot.

I just tried a new recipe the other day. It was delish!

-Potatoes, boiled, cooled and cut into bite size pieces
-Onions, chopped
-Celery, chopped
-Hard boiled eggs, chopped
-Mayo, roughly 3/4 c
-Mustard, roughly 1 to 2 Tbs
-Salt & Pepper to taste

My MIL makes the best potatoe salad BUT if you're a health freak like my entire family you would probably disagree! She makes a version of german potatoe salad that uses 1/2 lb of bacon cooked until crisp but then she also uses all of the bacon grease too! Luckily I had tried her recipe before I saw how she made it otherwise I would have never even tried it! If you're interested I'd be happy to pass along her recipe =)

I like mine with alot of mustard. Its very important to get the correct mustard to miracle whip ratio lol. Then I use pickles and onion pwder (I don't like real onions in it) and eggs have no place in potatoe salad they have egg salad lol.
