How to Keep Pork Loin from Drying Out?

Hi Moms! Does anyone have any great suggestions for keeping a pork loin moist over the course of an evening? My mother is thinking about adding pork loin to her dinner menu at her restaurant but we can't think of how to keep it from drying out over the course of dinnertime. Thanks in advance!

What about keeping it in a crockpot on low in it's own juices? I guess it depends on how you are preparing it, but that might work.

Agree with the crockpot method as well. That's how I cook them because baking them in the oven seems to dry them out too much for our taste.

Yes I agree with Tina. I make mine in a crockpot and let it sit and cook in a watery sauce I make with vinegar,sugar,water,soy sauce,and hot sauce.
