1- Contact the school for the relevant info
2- Head over to your local giant bookstore (barnes & nobel, borders, etc.), because they have some really killer books of science fair projects to look through.

Google Science Fair Projects for children their ages. You will be surprised at all the ideas that pop up. Also most Libraries have books with Science Fair Projects in them

Best guess is to Google "Science Fair Projects" and go from there. Also, Visit the library and inquire.
My kids were all about the "easisest project", like which liquid freezes quickest, or the famous celery stalk that sucks up food coloring.
Boring. I hope your kids are so in to cool things, like yawning, hiccups and weather, dogs, cats, other animal behavior, etc...So many current events and un-discovered phenomena, like Aurora Borealis...
At 5 and 6 they are excited

Hi! Helping kids develop their interest and love of science in a great thing! See if you can get the handout that they passed out that night or a copy of the presentation that was made so you are aware of any rules and requirements. (you would not want you kids to do a project and have it be disqualified from being part of the show--although it would be a learning experience for them (and you) it might not be the kind of example you want to have set.

Help them pick something that is appropriate for their age and interest level. You can get lots of books at the library or a bookstore on science experiments. Consider the time frame you have to work in -- you want to make it fun and not stressful.

Just be sure they do it, whatever it is. My son did one last year in Kindergarten. We let him come up with the idea, built the project (except for the cutting that took the power saw), and do the experiment on his own with supervision. He told me what to type out, and than he put together his display. The judges said they loved the fact that they could tell that he did it, when most of them are done by parents. He took 2nd in the whole fair, even against the 4th, 5th, and 6th graders, because he did it himself! There is a national science fair website you can look up for rules and guidelines.
