Im going to be making corned beef and cabbage for st pattys day and Im trying to get my menu together for the week. What are some of your favorite left over meals using up the remaining corned beef?

corned beef and cabbage soup is really good. use the left over corned beef, cabbage, any potatos or carrots and some chicken or vegetable broth along with the juices left in your pan. it is really good.

Corned beef hash served with eggs for another night's dinner. Just boil a potato or two (don't over cook it) and then dice it in tiny pieces along with the corned beef. Heat up a pan and put a little butter in, followed by the potatoes and corned beef. Let it get a bit of a crust on it before flipping it over in sections. Yum.
Hmmm. We never seem to have any leftovers.
The first year my husband and I were married, I made corned beef and cabbage and to my horror, he tossed all the broth down the sink.
The broth is the best part! If you have leftovers, you can just put it in the broth to make soup. Serve with sourdough bread and butter.
