Hi Mama's, I have a ton of roast in my freezer. My question is, besides bbq. beef, pot roast or veg soup, how else can I prepare a roast? Just getting tired of making it the same old way.
Another question is some healthy lunch ideas for my kids. They need to be quick and easy as I work from home & don't have a lot of time to prepare.

My favorite roast recipe is in the crock pot,
one can beef broth
one can onion soup
one can beer
cook till done, the broth makes like an au jus sauce and you make french dip and dip the sandwiches in the broth.

I like to make Philly steak sandwiches. I just heat the meat, make some AuJus from a mix and top it with some sauteed peppers and onions and provalone cheese. You can use any kind of bun or roll for the bread.
frozen sandwiches are a great easy lunch. You can spend an hour or so one weekend and make them up then freeze them. You take them out in the morning to thaw or zap them in the microwave for a few seconds. Pampered chef makes a sandwich press for this purpose and online you can find tons of recipes.
You can roast the roast as normal and make hash with the leftovers. or shred it as for bbq but put taco seasoning and make tacos, burritos etc. Wrap in wraps for sandwiches (add lettuce, cheese, other veg. if you want).
Wraps can be made ahead for lunches.
You could also cut the roast in strips while part-frozen, then make chili with it.
Other lunches: egg salad, hard boiled eggs, scrambled eggs, pb &j sandwiches, leftover dinner items. Cereal, toast with pb. Cheese sticks. Bagged salad with cheese and meat strips (leftover roast again). Roast beef sandwiches.

I like to make French dip sandwiches out of roast when I get bored with the old stand-bys. It is so simple. Mix 1 can of beef broth with 1 packet of dry onion soup mix in a crockpot. Place roast in crockpot and cook on low for 8 hrs. Remove roast and shred. Place shredded roast on rolls (I like to toast mine before hand), top with shredded mozarella, wrap in foil and bake in 350-400 degree oven until cheese is melted. Serve with leftover broth for dipping. I also like to sauté some onions and add them to the sandwich. Hope you enjoy this!
Although I don't have any ideas on the roast, I love visiting Allrecipes.com. It has fantastic ways to use oven and crock pot.
Making lunch for Kiddos can be hard. You may want to throw "sack lunches" together the night before as to free up your time. One idea might be baby carrots (they come already peeled), juice box(100% juice) and peanut butter sandwich. That gives them protein, veggies, starch and fruit. Sometimes my kids ask me to le tthem make their own lunches (5 & 9 years old) so I portion out crackers, meat, cheese, apple slices and veggies and they "make their own luch" They love it and it saves me time wwo run after my 14 month old. When I am really busy, I take about 20 minutes at night and get 2 or 3 days worthof kids lunches done up and labled in fridge. They love the anticiation of seeing the bags in there with their names on it and it saves me time during the day! Good luck.
My best suggestion...
Left over roast with some of the broth and a can of refried beans, some burrito seasoning and cheese if you like, makes a cheap easy burritos. Can be rolled into tortillas and if wrapped in waxed paper individually and put in a freezer bag you have a quick easy meal for lunches or on the go meal.
Shred the roast with a meat fork and some beef broth (water if you don't have broth)
One large can of refried beans
One package of burrito seasoning
Mix all together
Place a large spoon of meat mix into tortilla shell and tightly roll.
here's a couple of the variations I use for roast beef: chili based.....throw a couple of jalapenos in the pot, add some chili seasoning, lots of onion, garlic, celery, & diced tomatoes. Add a bottle of beer. You can use this as a roast or chop it up before cooking & use it for a chili. I've used it both ways- the roast is good with cheesy potatoes, a salad or slaw, & ....
Another option would be to do Italian roast beef: throw a ton of pepperoncinis into the pot...along with some Italian seasoning. Serve this with twice-baked potatoes or rosemary potatoes. It's also great shredded for sandwiches!

I use the meat for shredded beef burritos! Make it in the crockpot so it's a no-fuss.
You could make beef stew or beef stroganoff with it. Once it's partially thawed you can cut it. It cuts way better this way and you get nice cubes. There is a great recipe for beef stew on allrecipes.com. It' easy just beef, beef boulion & water, rosemary, parsley, pepper, I do a little garlic salt, celery, onion, carrot, and potatoes. add corn starch and water to thicken. it's great, we add a can of corn to it to, it's how my MIL made it.
For beef stroganoff I just get a stroganoff seasoning packet and make it that way but with strips of beef instead of ground beef.
I don't know if you have a Winco out there but just this year I found filet tenderloins there for like 3.80 a lb and they come in 3-5 lb long bags. They are great. I cut them into thirds and freeze them. It makes the best stroganoff, stew, fajitas, anything you would use beef with. The great part is you don't have to cook it for long to be tender because it is tender meat. This has cut the beef stew cook & prep time down from 2 hrs to just over an hour. While the beef is browning I'm cutting the veges. Once the beef is browned I add everything else and let simmer for an hour. The recipe calls for 1 hr simmer for meat and broth before adding the veges for another hour.
I usually brown my meat with olive oil, worsteshire or liquid smoke some pepper and garlic salt or ms dash. It gives it good flavor.
My husband is rather creative in the kitchen, and his suggestion was beef curry. Just cube up the roast and find a good recipe online. I was also thinking that you could cut the roast up and use it like steaks. Tasty!
As far as lunches go, every kid is so different with what they'll eat. Some hummus with crackers and veggies, cheese cubes, whole fruit, pb&j on toast (doesn't get soggy), hard-boiled egg, soup or casserole in a thermos... my kids are not very picky, and we often will use leftovers. Leftover pasta will often make a great cold pasta salad for lunch the next day.

As for lunches what about taking a Pillsbury can of refrigerated French bread - pop it out of the can and stretch it out to about a 12X6 rectangle - fill it with ham, turkey, cheese, tomato or any combination that your kids like. Roll it up and bake ad directed on the can. Then slice into individual portions. You can get several servings out of one sandwich and they freeze well.
I know a lady that has 8 kids (6 boys, 2 girls, all grown now) that used to cook several roasts at a time and any leftover she used a grinder and made up a "salad" like you would tuna or chicken for lunches the next day. I thought it sounded awful until I tried it but it's really good. You can even throw in some extra veggies that the kids won't notice.
You can thin slice the roast while it's still partially frozen and make fajitas, stroganoff, or stir fry. You can use differnt spices and/or veggies with the roast too. My mom always used Lipton soup mixes on her roast and they have several different flavor options, mushroom, onion, etc.
Look at the Kraft food website along with Food Network. They have TONS of recipes that are easy and delcious! The Kraft ones usually involve things you already have and are pretty cost efficient!
As far as lunches go...veggies and dip, hummus and bagels, tortilla roll-ups with cheese and lunch meat, pasta salad (make a big bowl on the weekend and use it for lunches for a few days), chicken and/or tuna salad sandwich or just to eat with a fork, crackers and low fat cream cheese...just a few favorites around our house!
I'm going to ditto the taco, fajita, wrap idea. My husbands family makes barbacor. Its just roast on tortillas.
