Question for Bakers

For my son's birthday party tomorrow I have made a cake that has three tiers on it and does not fit in my fridge. The cakes were baked last night and frozen and I plan on making the icing in the morning made of sugar, cream cheese, butter(I think) and marshmallow cream and frosting he cake in the morning. Will it be ok to sit out and about how long? I would like to use it as the center piece but I don't want anyone to get sick.

I have left frosted cake out for a week and even a little longer. My husband's birthday cake had cream cheese frosting. We kept it on the counter all week and no one got sick from eating it. Keep the cake covered so it doesn't dry out. But you also don't want to seal it too tight if it is moist. It will get sticky and the frosting will start to melt. I will usually stick toothpicks or even thin wooden skewers into the cake and then drape plastic wrap or Glad Press and Seal over the toothpicks and loosely seal it to whatever the cake is sitting on. If holes are left in the frosting, just use a knife to smooth them over. As long as it doesn't get too hot or too moist it can sit out even overnight and still look and taste good and be safe to eat.

It depends. If you keep the house cool it will be fine for hours. Thing is it will look like poop long before it is bad to eat.

Do you have a large cooler and large plastic containers? Milk jugs? If you add water, freeze, put the blocks of ice in a cooler and put the cake between them it will be chilled until you need it.

I'm thinking in Texas you must have air conditioning right? If not central, somewhere in house. If I am right it should be fine.

i worked for a bakery. we had a cool room. which was slightly cooler than room temp.(i think it was set to 62 degrees f. or so) this is where we stored all finished wedding cakes overnight and any other cake that was finilized the day before delivery (which was nearly every cake) so i think it will be ok to leave it out for a day. but would definitely refrigerate it after serving it to make it last longer.

The only ingredient you mentioned that has any chance of going bad is the cream cheese and it will be safe to eat for hours or even days. I buy cream cheese frosted cinnamon rolls from an unrefrigerated display. I leave them on the counter and continue to eat them for several days.

Cream cheese is mostly fat. Fat will become rancid before it spoils. Butter is also mostly fat. Sugar is still the main ingredient. Candy bars are usually not refrigerated. Your cake will be fine for several hours out of refrigeration. Your cake will have more flavor at room temperature.

I forgot to mention that refrigerating baked goods causes them to be tough, lose flavor and change texture. Bread dries out even if in a plastic bag. Refrigerating does not extend life.

My daughter refrigerate cakes. The frosting becomes soft and shapeless, the cake's texture changes; not pretty.

If one is not going to eat all the cake in a few days, it can be frozen.

Cakes should be kept either frozen or at room temperature, never refrigerated.

I think you'll be fine unless it's horribly hot and you have no AC (like our situation here in New England where so few homes are air conditioned!).

Eggs are the issue in things that sit out. But I agree with Julie below who says the whole thing may sort of soften and sag. Use ice and coolers if you can, or call a neighbor and see if anyone has a spare fridge in the basement or garage, and can move some things around to accommodate something tall. In a pinch, you can even use a large cardboard carton and put a few bags of ice on the bottom. Just be sure it's balanced so the cake doesn't slide.

The cake is usually frozen so it's easier to frost. It will dry out if you don't have it covered no matter if it's in the fridge, freezer, or on the counter.

I'm sorry I'm late coming to this.

the CAKES can sit out. I'd keep them frozen until I was ready to frost them.

I would NOT let cream cheese sit out in this heat for long. That's me. I know there are places that say a cake can sit on a counter for 3 to 5 days.

I don't know how cool your keep your home and where the cake will be sitting out.

You listed the ingredients in the frosting, but it's the cake you're asking about (since you plan on making the frosting tomorrow).

Most types of cakes can sit out of the fridge for days. They should be covered (or they'll dry out), but they usually don't need to be refrigerated.

Your question was can it sit out all day after frosted. The is no. But if includes cream cheese. Can you make frosting without cheese?
