Can anyone give me some quick dinner recipies that are healthy? im out of ideas and need to change it up.

I make stir fry often some with meat and some without, it takes a mere 15-20 minutes to make one for me. I also love to make up avocado egg salad.

Tonight we are cooking up spaghetti squash and putting marina over it. SIde salad and some bread. It takes a little while to cook up the squash. I bake it ahead of time and pull the meat out. Then reheat in a little olive oil on the stove or nuke it.

Well if you have chicken or beef stock, there's always soup. Just add rice or pasta or potatoes, veggies of choice, any meat, even hamburger, or whatever is leftover from last night. I make my own chicken stock, the freezer is full of it. There is ALWAYS something to make with it.

You could brown both sides of some salted and peppered chicken breast in a little olive oil, set aside once browned. Add chopped garlic, onions, carrots. Add a splash of white white and some chicken stock to make a sauce. Simmer for a bit, then put the chicken back in the pan til they're cooked through. Serve with rice or pasta or a little salad. Kids will like that right?

I like to grill chicken and corn and serve it in a lettuce wrap. Marinate chicken in something simple like lemon juice and olive oil or just through a rub on it and grill with the corn. Cut corn off cobb serve chicken with corn on top and some greek yogurt in a leaf of boston bibb or butter lettuce. Head lettuce works too. Serve with lemon wedge. My kids love it too!

Another easy fave is steam fish and veggies in a big steamer. Drizzle olive oil and salt and pepper after. Serve with lemon wedge!

My "fast food" - deli chicken shredded onto a quick salad dressed with oil and vinegar.

Next time you go to the store, pick up some sweet potatoes. Put them unwashed and unwrapped in the oven for about an hour. (hold on, Im getting to the healthy part of the quick dinner).....after that just scoop out the flesh and store it in a container for later.....anytime you want a quick dinner, grab some spag sauce and noodles and throw the sweet potatoe glob into the sauce (about a cup) and you can't taste it....gives extra nutrients to the sauce....Win!
