Grilled skewers. Marinade beforehand in lemon juice/olive oil/oregano. Lots of oregano. I think this would go better with the salad than any beef/pork recipe.

I have chicken out for dinner tonight - it's the de-boned thighs package that you get from COSTCO.
However - I REALLY want a Greek Salad (have all the ingredients - cucumber, olives, bell peppers, onion, feta cheese, mozzarella) and I know that a beef or a pork USUALLY goes better with this.
So my dilemma - how to prepare the chicken??? I'm stuck...any ideas you would pass my way?

Most restaurants offer Greek salads with the option of adding grilled chicken or grilled shrimp or salmon. Why do you think beef or pork have to go with salad? Grill up the chicken and slice in thinly to put on top of the salad! Season it with salt & pepper and some oil, and you're done.

The lemon soup would also be a good pairing and it's super easy to make. Similarly, you could skip the soup and have a lemon dipping sauce for the chicken skewers.
Or the grilled chicken, lemon allspice potatoes, and Greek salad.
We had greek last night. I used this recipe with chicken instead of pork (I have used pork in the past). Was yummy and would be great with the salad you plan to make. Best wishes.
Grill! even George Forman would be good. I use the same kind from Cosco and they get crispy along the edges and extra yummy. rub some EVOO and salt and pepper. Cheers!

I'd grill them, then slice thin and put on the salad.
First season with this:
1 1/2 tablespoons of chopped fresh thyme or 1 1/4 teaspoons of dried thyme
2 cloves of garlic, grated
3 tablespoons of olive oil
2 tablespoons of lemon juice
1 teaspoon of sea salt
I don't eat dark meat, but we eat a lot of chicken breats! I think chikcne would be good in the sald. If I am going to put chicken in a salad there are a couple ways I cook it:
You canbake it so it "shreds", or cut it up and cook it with some olive oil.
Just make sure whatever you do just add some good seasoning like lemon pepper!
Bake or Grill the chicken - a bit of EVOO, lemon pepper seasoning and at the last 10 minutes, put Feta on it. Delicious!!! Especially with a salad!

I might do this:
sliced a LOT of fresh mushrooms and fry in butter and some BEEF bullion. Then put a little pork gravy packet mix in, a bit of water, (and a bit of sour cream if desired) to make some gravy. Sprinkle the chicken with cajun seasoning before you bake it. then put the sauce over the top when it's done. serve with cubed baked new potatoes seasoned with herbs and the salad.
Personally I love grilled chicken. :) For the future, Ina Garten (barefoot contessa) suggests cooking chicken with the skin on and bone in. Then pull all the meat off the bone. Her chicken salad recipe is awesome. So I try to do as she suggests as much as possible because it really tastes so much better. Also try couscous with it. Yum!
Marinate it in the Greek salad dressing (olive oil, vinegar, oregano, garlic, salt, pepper, etc) and then grill it this evening. Don't forget the wine-Opah!
My favorite grilled chicken, which goes with nearly everything:
Fresh, chopped basil.
Olive oil
Salt
Pepper
Make a paste and paint it onto the chicken with a brush. Grill chicken until done.
Cut up the chicken and use for...anything.
Greek chicken pitas. Why not? Be sure to use greek seasoning like Cavendar's or something similar and grill it and drizzle lemon juice before serving for that just right flavor. Top the sandwiches with cucumber sauce, like at the restaurants when you order a gyro.
