I mostly use granny smith, but it depends on the pie (crumble topping, lattice, etc). Sometimes I mix granny smith and honey crisp. When I'm feeling bold, I use granny smith apples and pears. :)

I used granny smith, golden delicious and cortland. Sometimes I mix, sometimes I don't.
Granny smith - sliced very very thinly : ). Pears, not that's one I'll have to try!
My favorite apple to use in a pie is the one kind of apple you're not suppose to use....Macintosh. I know the sliced apples should hold their shape in the pie, but I LOVE my apples soft and mushy! Yum!
Granny smith and any other milder apple will give it a great flavor. My mom won contests with her apple pies. She sometimes even used 3 different kinds.
Its been awhile since I made one, but I like it with golden delicious, and any red apples. I don't like granny smith, they are too sour for me. My father in law makes the best applie pies in the world. I can't wait for Thanksgiving to have a piece!!
There are a lot you can use. Some are better for eatin' apples some for bakin', some both. Granny Smith are used a lot, but I personally think you need more sugar when using them. You need a hard apple. Gala, Pink Ladies are alright too. Go to a site for apple orchards they usually list which ones are best for baking pie. I suddenly can't think of them. It depends how you like yours, but I like slicing the apples on the thin side and put in layers
My daughter swears by Granny Smith, and my husband uses Macintosh....
We go every fall and pick our own apples, I have no idea what they are by the time we get home, but since they start to turn before we ever eat them all i do know that they make GREAT pie. I think the only thing I don't use are granny smith.
