Did you know you CAN bake scrambled eggs in a large pan(s) (Google it, my friend just did this).
I'd have bowls of:
scrambled eggs
sausage
onions
red peppers
green peppers
cheeses
bacon crumbles
and don't forget the HOT sauce!
I'm taking care of the food for a brunch coming up. We're probably looking at about 45 people. It was suggested that we do breakfast burritos...that way everybody can make their own...and so on. I'll be doing several large bowls of fresh fruit salad as well. I'm not a huge breakfast burrito person...I throw them together on occasion for dinner if I'm rushing and didn't plan anything :p. So...my questions...What do you put in your breakfast burritos? Any tips for preparing them for that large of a group? My big concern is the scrambled eggs :/.

Thanks so much! I actually found out we're probably looking more at 30-35 people...some can't make it. Still a decent crowd...and I tend to want to make sure there's no chance of running out :p. Yours all sound much better than what I throw together on a rushed weeknight! I may actually make some tonight...just so that I can do a trial run of some flavors and what not...that and it just sounds good :) I'll look into the chafing dishes - I do enough cooking for large groups that it would totally be worth it :).

The eggs an be served in one of those buffet trays with the burner underneath.. You can purchase them at Cosco, a party place or a restaurant supply . They are not eensive and you can throw it out when you are finished.
Bacon, breakfast sausage, potatoes like hash browns, black beans, hot sauce, cheese, sour cream...eggs, And tortillas...
Eggs, of course.
Sausage, hash browns, cheese and some kind of salsa/tabasco sauce for me.
This is what I put in mine:
*scrambled eggs
*hash browned potatoes
*salsa
*cheese
*optional: bacon, or cut up sausage
Do you have any chafing dishes? I bought some at Costco years back and they're awesome.
If you want to "cheat" you can do the following- make the egg portion in adavnce, in the oven. Whip up 100 eggs, I always budget roughly 2 per person then a bit extra, cook with chopped onion, mushroom, peppers, olives, whatever in well greased pyrex trays. Bake till the egg is set. Then cut into a palm sized portions, add cheese and wrap with the burritos. Wrap in foil. These can be plated really easily. Hash browns, black beans, salsa, sour cream, guac, cheese can be added on the spot.

My standard ingredients are potatoes, scrambled eggs, fish (tilapia), cheese. If you're concerned about the egg (allergy, freshness?), substitute meat for protein. I don't eat pork, so I might do ground beef. (My baby reacted to the fish.) You will probably be allergy-safe with beef and potatoes.
They just did these at a swim meet I was at last weekend (very large crowd), and they were delicious. I LOVE breakfast burritos - I'd eat them anytime! Start with large tortillas. They had hashbrowns, bacon (bacon or chorizo would be my fav - ham, or sausage my least fav), cheese (a must), and of course eggs. You could make some veggie, and serve with a side of fresh salsa or Cholula/Tabasco. Very easy.
Here is how they do it in a restuarant - beat your eggs, add eggwhites to the regulare eggs with yolks. Put them in a ziplock bag, allow them to boil in medium temp water. Then take them out of the bag and chop them up - DONE!
In my burritos
Cheese, Sausage (turkey, pork, chicken), Bacon (pig only), Peppers, Spinach, potatoes (dice, boil 10min then fry in pan for 10 to brown add garlic and pepper), salsa, ham, you name it really!
We like hash browns, scrambled eggs, chorizo sausage (but you can put out any cooked breakfast sausage), green chiles (new mexico style!), cheese, hot sauce. Some people like bacon instead of sausage. Some people like to have no meat. That is a huge group to cook for. I think I would make french toast casserole and an egg fritatta casserole instead.
