Cut em in half lengthwise, scoop em out, mix other goodies in with the potato, put it all back in the skin and heat it back up in the oven.
Not rocket science here..but I am at a loss while in the midst of Christmas creations,wrapping presents and cards. I have no creative juice left in me to think of a way to recycle these Costco sized baked potatoes into a delectable feast. (Leftover baked potatoes from our son's water polo tournament that didn't sell at the snack shack.)
What would you do with 10 gynormous baked potatoes?? Seems like a mundane question right now when so many people have much heavier things on their minds.

Chop it all up.
Throw it in a frying pan with diced up bell peppers, onions, garlic etc. or whatever you feel like, throw some butter in it too, and just fry/cook it until it is nicely browned and crisp. Like hash browns.
And then toss some cooked bacon on it.
Yum.
Or do it, but throw it ALL in a baking dish and bake it in the oven until browned and crisp.

What about a yummy potato soup, with bacon/ham and kale?
If you get desperate, how about just having them as a whole meal? Buy lots of fixings for them, bacon, cheddar cheese sauce, broccoli, sour cream & chives and let the family make their own?
Or you can shred them and freeze them for hash browns later?
I use extra baked potatoes to fry up for breakfast. I also love making a cheesy potato casserole. I wouldn't use all 10 at once unless you have enough people to be able to consume them all.

if they are already cooked? I would mash them up and have "loaded mashed potatoes"...add some sour cream and more cheese and - ENJOY!!!!

Twice baked potatoes!! I love those. You can do different flavors, like cheese and broccoli or "loaded" with sour cream, chives, and bacon (or fakon).
Potato pizzas- slice into disks, top with sauce, cheese, pizza toppings, bake or microwave

If you want to try something that looks like a ridiculous amount of work, here's a link to a recipe for duchess potatoes. You can use the baked potatoes as a start and then scoop out the potato flesh and mash them.

you could also make potato skins .... YUMMY.
potato pancakes are good too. Oh and perogies ... love those.
Mash them up, skins and all, mix with a little milk and make potato pancakes.
Grate them and make that cheesy potato casserole! Yum!

I have a lotta heavy stuff in my life right now, but its the LITTLE things that get us through the big things, and make home a sanctuary, and life good.

Reading this thread made me SUPER hungry.
Only thing I can add is making breakfast burritos to freeze.
Here's an entirely OPTIONAL list... As in w/ breakfast burritos, there really aren't rules... Except that they usually have eggs, protein, veggies, cheese, and sauce. But not always, and there are a lot of options therein.
* Chopped precooked potatoes
Sausage or Bacon or chicken or any other protein
Scrambled eggs
Cheese (any kind, shredded)
Onions/peppers
Sauce : (salsa, salsa verde, ketchup, sriachi, etc.)
Making sure everything is cold before assembling, assemble 4-40+ burritos. Lay seam side down on a cookie sheet (or whatever fits in your freezer, with the burritos NOT touching. Freeze hard (at least 12 hours). Take off cookie sheet and place in a big ziplock bag, since once frozen the wont stick to each other.
Zap in microwave for 2min30seconds (or until hot) on your mad dash out the door in the morning and eat in car on way to school/work.
(My favorite 2 burritos are
eggs/sausage/potatoes/peppers/ketchup &
eggs, link sausage, and maple syrup
I'm lactose intolerant... So sometimes I make poet gooey cheesy ones
- eggs, veggies, avocado, bacon, Swiss BUT I stick a lactase pill in each end of the burrito, so I don't make myself sick. Microwav doesn't seem to affect them.
