Hi all,
So I am in need of buying a good knife. Although I would LOVE to buy Cutco knives, I just can't afford them. :( Any suggestions on brands? I need it to cut up whole chicken... and beef etc...

I have the top of the line Henckels (Professional) and I LOVE them.
They were my 1st Mother's Day gift almost 20 years ago and they are still perfect.
Wusthof is my favorite. But I use kitchen shears to cut up whole chickens, also Wusthof.

Hubby uses a good pair of kitchen scissors to butcher chickens. He is under 5 minutes a bird at this point ;-)
We are very happy with our Wusthof.
I have a Wusthof set as well- love it.
I agree that a Good pair of poultry scissors are awesome for cutting up chickens. I had never owned a pair until about 2 years ago. It has been wonderful. We eat a lot of chicken and I usually purchase whole chickens or the bone in breast. The scissors allow me to dash through the process.
I LOVE my Henkel 8" chef's knife. I like Wustof too. If I had to have only two knives I would have the 8" Chef and a paring knife. Not much you can't do with those two (oh, and a bread knife).
Henckels and Wusthof are really good brands. You can get them at most department stores and Bed Bath and Beyond.
Since you are in Dallas area, I highly recommend the Ace Mart restaurant supply. Their knifes are much cheaper than all the name brands, can go in the dishwasher no problem, and can be easily re-sharpened when necessary. I sharpen mine about 1x per year which takes about 5 minutes and they are awesome. I don't think I have paid more than $30 for a knife and they have lasted 8 years so far. Love this place because it is made for restaurants, which means their stuff holds up yet can be put in dishwasher.
My parents have some henkels and I love them. They actually found them at a thrift store! Occasionally Macy's has them on clearance for a really good deal too.
i hear ya, i've got the cutco chef's knife and kitchen shears, and they're awesome, but STUPIDLY expensive.
what was i thinking?
my BIL got a great chef's knife at costco. he paid under $100 for it.

I really like my Henkels Santoku 8 inch. Use a 20% coupon at Bed Bath. I take my knives to the knife store in Willow Bend Mall every November before Thanksgiving to be sharpened, which is about $2/blade.
Wusthof Trident chef's knife. You don't need the whole set. That and a good paring knife (Victorinox isgood and cheap) will do pretty much anything you need.
Cutco is a waste of money.

I love my Wustof grand prix santoku knife. It is pretty much the only one I use. I've had it for about 10 years now. I keep it sharp using my $7 Edgeware knife sharpener.
Have to say that the J A Henckels brand knives that I got in 2005 are great! Still using them, have never had a problem! One thing I learned a while back is that the metal inside a knife has to be all one piece, not one piece of metal as the blade, connected to a separate handle, but one continuous piece...does that make sense? You can tell that cheaper knives are 2 or 3 pieces, they're no good. You get what you pay for really...but the brand I mentioned is great.
